Keto No Bake Cookies

Recipe Update- We have seen some comments on social media stating they don't like this recipe because they "taste too much like peanut butter" or "have a fudge like texture instead of a cookie".  

Our explanation These no bake cookies are meant to be a low carb, keto snack approved version of a traditional NO BAKE COOKIE.  Which... is nothing like a cookie at all. They too, tend to have a more fudge like texture. 

Peanut Butter or Chocolate Keto Cookies

As for the peanut butter flavor-These taste like peanut butter unless you add cocoa to make the chocolate peanut butter version. Hope this additional information helps clarify what the low carb no bake cookies recipe is!

Our Sweetener Recommendations

 This no bake keto cookies have saved my life, not joking! They help me kick any craving that may otherwise have kicked me out of ketosis.

 Monkfruit is far less bitter and has absolutely no after taste or cooling, therefore we recommend using this as your low carb sweetener choice.. In this keto no bake cookie recipe there is so much chocolate flavor the sweetener is hidden.

Is Peanut Butter Keto?

Ok so these low carb no bake cookies are made with peanut butter. There is a lot of debate about whether or not peanuts and peanut butter are actually keto approved.  Here is the short story on that -  the keto diet eliminates legumes. A peanut is technically a legume.

However, they do not affect the blood sugar as traditional legumes do.  Using an all natural peanut butter will give a higher fiber count with lower sugar. Thus, less carbs.  There are a lot of keto dessert recipes out there using peanut butter. 

Use an Alternative Nut Butter for Low Carb No Bake Cookies

If you eat 100% strict or Paleo , you can skip the peanut butter and use any nut butter you desire for these keto no bake cookies.

The recipe makes 18 cookies, nutrition is based on a serving size of 2.

Ingredients

  • 2 tablespoons real butter
  • ⅔ cup all natural peanut butter (or your choice of nut butter)
  • 1 cup unsweetened all natural shredded coconut
  • 4 drops of vanilla Lakanto or 2 tablespoon granulated sweetener of choice
  • 1 tablespoon cocoa powder (optional)

Instructions

In a microwave safe dish, melt the butter. NOTE- if using granulated sweetener instead of the stevia liquid drops , add it here. The sugar will need to dissolve.

Stir in the peanut butter until smooth. If you chose to make these with cocoa powder, add it now. There are two flavor versions of these no bake cookies, peanut butter and then the classic chocolate with peanut butter. 

Next, add stevia (unless you used granulated sweetener) and coconut. Mix well.

Using a 2 inch scoop, or eye ball it like I often do, scoop onto cookie sheet. If you wish to line your pan use wax paper so they do not stick. However, these did not stick to our uncovered pan. Once frozen they popped right off.

Freeze for 5-10 minutes.

Store in a sealed bag, refrigerated.  If you do not store these cookies in the fridge they will be sticky.

Keto Coconut Cookies

Using coconut for this easy keto no bake cookie alternative was a fantastic idea, however we are often asked what else can be used. Some people have an allergy to coconut or simply do not like it. We suggest using slivered almonds or a mix of crushed nuts.

Recently, a follower mentioned using oats... this recipe was created to be a low carb keto approved version of the traditional no bake oat cookie. Since oats are a high glycemic food and not technically keto approved we do not suggest using them while eating the keto way.

  2. So I know nothing about the Keto diet except it keeps the body in Ketosis, however you asked for a coconut substitute so I would throw out their quinoa flakes. I’ve heard they can be used to replace the oats in a no bake cookie. I will say they are a lot smaller grain, kind of similar to very very course ground oats IMO, but they cook up smartly so would work in this recipe. Another thing to use could be chow main noodles, and they even have some thinner ones that are used for making “haystack candies”or chocolates homemeade. Rice Krispies aren’t too bad in here either, lol. ( I love some no bake cookies) especially since I am celiac and have to be gluten free, they are my go to. I’m not a big fan of coconut but will try these for sure since the oats are starting to effect my IBS. Happy cooking!

    • Hi Frank, No that just means there was a value missing from the CARB field and that the recipe card only gave NET carbs. I manually adjusted it to reflect full nutritional information. The carb count will also vary depending on the type of peanut butter used, like a good all natural with no added sugar. Hope that helps!

  3. These are pretty good. Must be served right from fridge or freezer, but left out for any amount of time they become soft and sticky. Also better if they're small - like ½ Tablespoon each. This was my first time using Monkfruit (granulated). I like it much better than stevia. Thanks

  6. These are super easy to make and a delicious treat! I used 1/4 powdered swerve instead of liquid stevia and added 1/2 cup of Lilly's chocolate chips, heated it up to melt the chocolate- so delicious! Glad I found this recipe!

  7. Terrific! I made these cookies just as you described and found they tasted better the next day. I was surprised that 2 cookies did hit the sweet spot and fill me up. Stored them in the fridge. Thanks and I will be trying more of your recipes.

    • You can, but Truvia isn't keto friendly as it is a mix of sugar and stevia. It may be ok for a low carb diet.

  9. I just made these because I was craving something sweet sooo bad. Used homemade low carb granola instead of coconut (as I didn't have coconut to hand and most of the granola is coconut anyway) and they're absolutely lush!

    • Real butter, not margarine. In the stores it will be labeled as butter, but some people think when we say butter we mean whatever they have in the fridge that they consider "butter" , which can be anything. 🙂

  13. These are a simple but lovely treat! I had slipped into using a protein bar(expensive & not ideal) as a holiday answer to all the treats.
    I made these with almond butter and a mix of erythritol and liquid stevia. OMG! Simply amazing. 16 months on keto and I wish I had known about these little morsels sooner.

  14. I know this effects the calorie and carbs, but for those who want a more chocolatety flavor: add two table spoons of cocoa powder and 12 drops of sweetener, I used the caramel stevia drops. This makes the batter a little more dense, which is nice if you are using the organic peanut butters that tend to be a little oily (but only 5 carbs instead of 7-9). However, with the denseness, you get less cookies, I was able to do 10. I also like my cookies to be cookie sized, so I was generous. Each cookie is probably about 3 inches.
    Thanks for the inspiration/direction on how to make these, It's a relief for my husband and I, strict keto and heading to a cookie party tonight! =)

  16. These are wonderful! So quick and easy to make. Great for holidays! I made 3 batches...1)used almond butter and 2/3c of coconut and 1/3c chopped pecans also added the cocoa powder. I also used 1/4c powdered stevia blend instead of drops...seemed to be the perfect combination for the unsweetened cocoa. 2)Made exactly to the recipe using crunchy peanut butter and 1/8c of powdered stevia blend instead of drops. 3)Made exactly to the recipe with creamy peanut butter and 1/2c of lily's chocolate chips. I used 1/4c powdered stevia blend (no drops) for this batch. I also warmed the entire mixture about 15 seconds in the microwave and gave it a final little mix around......the chips were just slightly gooey so it kinda drizzled the chocolate throughout the mixture. My husband said that these are addictive! Thanks so much for the recipe.❤ (The sweetener I used was steviva brand powdered)

    • We buy our coconut from Amazon or a local store here. As long as you use unsweetened you can basically choose any kind!

  20. Do you happen to know how many carbs are in each cookie. I just made them and can't wait to try them. When I licked the bowl I was amazed how good it tastes I'm keeping them in a freezer bag in the freezer because with the warm weather I feel the will be a treat as a snack.         • LOL the recipe calls for DROPS. It calls for 2 tbsp of granulated if YOU choose not to use the drops. Not sure where you are getting 1/2 tsp from.

        • Must be EXTREMELY tiny!! I only got 15 that are just barely bigger than a half dollar! How they got 2" balls and 18 cookies is BEYOND Me!! So many of these recipes are so wrong...tried Blueberry Breakfast bars and they were almost fillingless and so crumbly...must be missing something...cause not having much luck with alot of the keto recipes at all!

          • Sorry you have so much trouble with keto recipes. It is odd, these ones that have failed on you have amazing reviews. They have been tested and made a GAZILLION times. It usually isn't the recipe. 😉

        • Hi Georgia, the recipe uses Vanilla Lakanto stevia DROPS. If you need to use sugar probably 1 tbsp. but we haven't tested it with sugar.
