A simple satisfying chicken fajita bowl that is bursting with fresh flavors, more than just a salad and Keto Low Carb Approved, great for Meal Prep. Our chicken fajita bowl is like a hearty salad, less lettuce and more meat! This fajita bowl is filled with seasoned chicken, sauteed onions and peppers, and served over greens.

Chicken Fajita Bowl

This is a fairly simple recipe, particularly if you use bagged salad to save the labor of preparing the greens. With homemade fajita seasoned chicken, and vegetables. I love using bell peppers and onions, it really brings out all the flavor.

Most fajita recipes will include sauteed peppers and onions, as does this one. I reserve a portion of the fajita spice rub to add to the peppers and onions that I prepare in a separate pan from the chicken. Lime juice and Hickory Liquid Smoke are acidic and they will penetrate the peppers and onions during the saute which gives them a tart quality I find appealing.

What Type Of Seasoning Do You Put On Chicken for Chicken Fajitas

The key to this recipe is in the preparation of the spice rub and the tenderizing of the chicken as well as drying the surface of the chicken prior to putting on the rub. I created a homemade spice rub that is incredible. Garlic powder, variety of chili powders, onion powder and more. These all come together and truly add SO much flavor to the chicken and bell peppers and onions.

I like to combine my own ratios of chili spices, this gives me total control of the final flavor as commercial chili powders are a blend of spices in addition to the chili.

What Type Of Chicken Can I Use for Keto Fajitas

I use a chicken breast or chicken tenderloins when making fajitas. You want boneless meat.   Having boneless meat allows you to dice or chop up the chicken easily for the fajita salad. Grill chicken or cook in a skillet, and add the chicken and veggies on top of a bed of rice.

Additions to Your Chicken Fajita Salad Bowl

  • Cauliflower Rice | Make this a keto chicken recipe & Serve your fajita mixture on top of cauliflower rice for a low carb twist.
  • Brown Or White Rice | If you are not low carb, reach for brown rice or white. It will add a heartiness to the bowl and pair nicely with chicken peppers and onions. It becomes more of a rice bowls recipe.
  • Eat Plain | Skip lettuce or your choice of rice and eat plain! It is incredible all on it's on.
  • Tortillas | Transform this recipe into classic tortillas. Whether you reach for low carb tortillas, regular tortillas or even wheat, it is incredible. Just warm them up in the microwave or oven and serve.

Can You Cook Beef and Chicken Together

Yes, you can. Simply marinade them in separate bags, and when you go to cook the meat you can combine them. I use the same seasoning as this recipe for both types of meat. You can also add in shrimp on top, but you will want to wait to toss it into being cooked until your meal is close to done since it cooks so much faster.

Best Toppings For Chicken Fajita Salad

  • Sour Cream
  • Fresh Tomatoes
  • Avocado Or Guacamole
  • Splash of Hot Sauce for Heat
  • Lime Juice

Can You Meal Prep This Fajita Bowl

Yes! What I tend to do is put the meat and veggies in the bottom of an airtight container. Then on pile on the lettuce. This will help it from wilting throughout the day. Then shake, and dive in.

Best Way To Store Keto Fajitas Bowl

I like to keep my salad stored separately in the refrigerator. I will place the meat and veggies in one container and store the lettuce in a separate container. Then when I am ready, heat up the chicken mixture, and then top the lettuce.

Can I Swap Chicken For Steak In This Fajita Bowl

Of course. I have used steak and it works great. I love this spice base with chicken but it does still work with using a steak. Just reach for a quality cut of steak so it isn't overly tough.

  • Mexican Stew | This stew can be made in 20 minutes! It is quick, hearty, and bursting with flavor. It is one of my go-to stews lately.
  • Keto Taco Faux-Tato Salad | You got to try this fau-tato salad recipe. It has a taco spin and offers the idea of a potato salad but with a low carb twist.
  • Chili Lime Chicken Cups | Rice cups are magical. They are bursting with all that south of the border flavor, and are a small bite-size appetizer to serve up to guests.

    • It will vary, typically a serving of chicken or beef is 4oz. but I eat double that, so when making this I make enough for 4 servings. 1lb.
