What is Mediterranean pasta salad?

A Mediterranean pasta salad is a simple pasta salad where the basic ingredients include olives, tomatoes, and feta cheese. It is tossed in a light and fresh made vinaigrette dressing such as a balsamic vinaigrette or a light lemon vinaigrette.

You can choose to add extra ingredients to personalize your Mediterranean pasta salad to your liking.

The ingredients that go into a Mediterranean pasta salad can be swapped for a similar ingredient, or completely left out if desired! Additionally, if you want to add meat, go for it!  Chicken or Lamb would be to die for in this recipe. Otherwise, stick to the vegetarian version.  Add this to your Mediterranean diet recipe list!

Like this vegetarian dish, you can swap your pasta with whole grain or whole wheat pasta to make it healthier. Also, for your Mediterranean pasta salad sauce you can choose to swap the sugar for Stevia or honey.

How To Make Grilled Vegetable Kabobs 

and Mediterranean Pasta Bowl 

To make this healthy and tasty Mediterranean pasta salad recipe, we’re going to first make the sauce. Once the Mediterranean sauce is made, place it to the side and pour a ½ cup of the mixture into a shallow bowl to coat the vegetables that will be getting grilled.

For this recipe, we’re going to grill yellow squash, zucchini, red onions, and bell peppers. Before grilling vegetables, we’re going to marinate it in some of the reserved Mediterranean pasta sauce for a few minutes, while the grill preheats.

Once the vegetables have marinaded, thread the vegetables through a medium skewer to create vegetable kabobs. This does not have to be perfect. Feel free to use a grill basket if you have one instead of making grilled vegetable kabobs!

After you’ve grilled your vegetables, you’re going to take a large bowl, add your al dente cooked pasta, grilled and cold vegetables, and slowly fold in your dressing, adding only enough to wet the pasta and vegetables. There may be some dressing left over, which is great to pour over a tossed salad for the side.

Either leave the kabobs to the side and your family can grab as many as desired, or for ease, just take the grilled vegetable kabobs and remove the skewers and toss the grilled vegetables into the salad. You will still have the smoky flavors of the grilled vegetables that makes this Mediterranean bowl unique!

Once your Mediterranean bowl is completed, top it with freshly chopped basil and feta cheese!

Prep Time: 15 Minutes

Cook Time: 15 minutes (Pasta and Kabob)

Note: For an easier dish you can sub the vinaigrette with Italian dressing or pre-made balsamic vinaigrette.

Ingredients:

Vinaigrette-

  • ¼ cup of balsamic vinegar
  • ½ lemon, juiced
  • 1 teaspoon of salt, or to taste
  • ½ tablespoon of sugar, or to taste
  • ½ teaspoon of ground black pepper
  • ½ cup of olive oil
  • 2 tablespoons of freshly chopped basil
  • 1 teaspoon of ground thyme

Kabob-

  • 1 red bell pepper, cut into chunks
  • ½ zucchini, sliced
  • ½ yellow squash, sliced
  • ¼ of a red onion, cut into chunks
  • 6 oz of cooked bowtie pasta
  • 2 plum tomatoes, chopped
  • 2 tablespoons of black olives, sliced

Directions:

  1. Using a large bowl, mix together vinaigrette ingredients and set to the side.
  2. In a large bowl toss together kabob ingredients with ¼ cup of vinaigrette mixture. Let marinate for 5 minutes while you preheat the grill.
  3. After 5 minutes of marinating the vegetables, thread the vegetables through medium length skewers. (Add 1-2 of each vegetable, creating a pattern.)
  4. Grill kabob until sides have slightly charred, turning every 2-3 minutes for a total of about 6 minutes. Remove from heat and set aside.
  5. Add pasta, tomatoes, and black olives to vinaigrette bowl. Toss the ingredients together and serve with a topping of 2-3 kabob over it. Garnish with extra freshly chopped basil, if desired.
