This is a fairly simple recipe, particularly if you use bagged salad to save the labor of preparing the greens. With homemade fajita seasoned chicken, and vegetables. I love using bell peppers and onions, it really brings out all the flavor.
Most fajita recipes will include sauteed peppers and onions, as does this one. I reserve a portion of the fajita spice rub to add to the peppers and onions that I prepare in a separate pan from the chicken. Lime juice and Hickory Liquid Smoke are acidic and they will penetrate the peppers and onions during the saute which gives them a tart quality I find appealing.
What Type Of Seasoning Do You Put On Chicken for Chicken Fajitas
The key to this recipe is in the preparation of the spice rub and the tenderizing of the chicken as well as drying the surface of the chicken prior to putting on the rub. I created a homemade spice rub that is incredible. Garlic powder, variety of chili powders, onion powder and more. These all come together and truly add SO much flavor to the chicken and bell peppers and onions.
I like to combine my own ratios of chili spices, this gives me total control of the final flavor as commercial chili powders are a blend of spices in addition to the chili.
What Type Of Chicken Can I Use for Keto Fajitas
I use a chicken breast or chicken tenderloins when making fajitas. You want boneless meat. Having boneless meat allows you to dice or chop up the chicken easily for the fajita salad. Grill chicken or cook in a skillet, and add the chicken and veggies on top of a bed of rice.
Additions to Your Chicken Fajita Salad Bowl
- Cauliflower Rice | Make this a keto chicken recipe & Serve your fajita mixture on top of cauliflower rice for a low carb twist.
- Brown Or White Rice | If you are not low carb, reach for brown rice or white. It will add a heartiness to the bowl and pair nicely with chicken peppers and onions. It becomes more of a rice bowls recipe.

Yes, you can. Simply marinade them in separate bags, and when you go to cook the meat you can combine them. I use the same seasoning as this recipe for both types of meat. You can also add in shrimp on top, but you will want to wait to toss it into being cooked until your meal is close to done since it cooks so much faster.

Yes! What I tend to do is put the meat and veggies in the bottom of an airtight container. Then on pile on the lettuce. This will help it from wilting throughout the day. Then shake, and dive in.

I like to keep my salad stored separately in the refrigerator. I will place the meat and veggies in one container and store the lettuce in a separate container. Then when I am ready, heat up the chicken mixture, and then top the lettuce.
Can I Swap Chicken For Steak In This Fajita Bowl
Of course. I have used steak and it works great. I love this spice base with chicken but it does still work with using a steak. Just reach for a quality cut of steak so it isn't overly tough.

Ingredients for the Fajita Spice Rub:
- 1 teaspoon of Hot New Mexico Red chili powder
- 1 teaspoon of Pasilla chili powder
- 1 teaspoon of guajillo chili powder
- 1 teaspoon of salt
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- 1 teaspoon of sugar or 1:1 stevia powder
- 1 teaspoon of corn starch
- ½ teaspoon of onion powder
- ½ teaspoon of garlic powder
SHORTCUT IDEA- Honestly a Fajita Seasoning Packet works just fine. Check the label for added sugar .
Reserve 1 teaspoon of this mixture for the peppers and onions below, the rest can go on the chicken
Ingredients for Chicken Fajitas:
- 1 to 1 ½ cups of fresh red, yellow, and green bell peppers, diced to ½ inch pieces
- ½ cup of sliced onions, reserve some for garnish
- 1 Tbl of Hickory Liquid Smoke

- 1 teaspoon of the rub spice mixture
- 1 Tbl vegetable oil
- 1 Tbl butter
Cooking the Chicken
- 12 inch skillet, 2 Tbl vegetable oil, 1 ½ Tbl butter
- 1 Tbl of Hickory Liquid Smoke
- 1 Tbl of lime juice
The green salad:
Use your judgment on how much lettuce and other greens you want. Three chicken breasts sliced, will make more than enough to serve four people. Tomatoes can make a flavorful addition to this salad. Red Onions make a beautiful and flavorful garnish as does some shredded cheddar cheese.
INSTRUCTIONS
- Measure all spices into a cereal sized bowl, and mix them thoroughly with the lime juice and liquid smoke. Taste the mixture to make sure you have the flavor and heat level you want
- Reserve 1 teaspoon of the mix for the peppers and onions.
- Slightly pound the chicken out to flatten and tenderize.
- Rub both sides of 3 chicken breasts with the mixture.
- Add vegetable oil and butter to skillet and set the burner to medium-high. Saute sliced chicken for about 2 minutes, add peppers and onions .
- Saute until chicken is done, about 165 degree.
- Sprinkle remaining seasoning over chicken , peppers and onions.

Also: SUGAR?!! You give a ’suggestion” for stevia, but you put sugar as an ingredient for a KETO recipe.
(Lots of other subs for the sugar: Allulose, erythritol blends, etc)
CORN STARCH is not keto, plus it is made from GMO corn.
Not sure about liquid smoke, if it has sugar in it…never used it.
Kind of disappointed in this recipe. I may still try it out, but with KETO ingredients.

how much chicken or steak for this recipe? I see 2 breast but is it a pound or more; same as chicken an pound or more?
It will vary, typically a serving of chicken or beef is 4oz. but I eat double that, so when making this I make enough for 4 servings. 1lb.
