Our Green Chili Chicken Enchilada Skillet is a quick and easy version of the popular Mexican Dish , but without the hassle. Instead of stuffing and rolling tortillas everything gets tossed in a skillet. To make the enchilada skillet keto or low carb approved, simply swap out the tortillas. Watch the video below to see how easy it is! Please note for the video- we use less enchilada sauce because I like the texture of the tortillas that way, less soggy, if you want the traditional feel more sauce can be used.

Perfect for anyone who loves enchiladas, but doesn’t have a lot of time on their hands, this delicious skillet meal is a perfect busy weeknight dinner. We have taken the process of making the Mexican food favorite, enchiladas and simplified it into a skillet version for one of those quick meals. Traditional enchiladas can take up to 45 minutes just to prepare. This whole dish is ready in that time.

What You Need to Make this Chicken with Green Chilies Recipe

  • Chicken Breast. You’ll cook this and coarsely chop it. Try doing this step ahead of time to make this recipe even quicker in the evening. OR use something like Perdue short cuts or Rotisserie chicken.
  • Olive Oil. Used to cook the bell pepper, garlic, and onion.
  • Green Bell Pepper and Onion. The perfect vegetable pairing for enchiladas.
  • Garlic. Adds incredible flavor.
  • Sour Cream and Cream Cheese. Creating the creamy base, the sour cream helps thin out the cream cheese plus the sour tang is perfect for enchiladas.
  • Green Chile Enchilada Sauce. Depending on the brand you use, this can add some heat along with delicious flavor.
  • Low Carb Tortillas, OR for non low carb and keto use Corn Tortillas - Adds some texture to the dish and is needed for this to be a true chicken enchilada meal.
  • Shredded Fiesta Blend, More Cheese. Is it really enchiladas without cheese?
  • Roma Tomatoes and Cilantro. For garnish.

This is easy. To make the green chili chicken enchilada recipe keto or low carb approved simply choose low carb tortillas. Most grocery stores have a brand they carry, such as Mission or even their own brand, like Great Value at Walmart. With the low carb way of eating being so popular, it is getting easier to find store bought keto products like tortillas for chicken enchiladas.

Why is Cream Cheese in this Chicken Enchilada Recipe

Although cream cheese is not traditional in an enchilada dish, we have added it to this chicken with green chilies recipe for extra creaminess. It also benefits those on a keto and low carb diet by making the chicken enchiladas higher in fat and with less carbs.

Where Can I Find Green Chile Enchilada Sauce?

Most grocery stores will sell different brands of keto approved Green Chile Enchilada Sauce in the Mexican food aisle with all the tortilla shells and salsa. If you don’t find it at your local grocery, check Wal-Mart or Target. Any brand will work. Most of them are naturally low in carbs, but check the label to be sure there is no added sugar.

Do I have to use Fiesta Blend Shredded Cheese?

Fiesta Blend isn’t required, but it is a great melty option. The blend of different cheeses adds more flavor, and complexity. Fiesta Blend isn’t usually spicy, so if you want to add a little kick to your enchiladas, try a blend with pepper jack or other jalapeno-infused cheeses.

Should I Serve A Side Dish

Our keto chicken enchilada skillet is designed to be a complete meal, but would pair great with a side dish. Any type of classic Mexican food sides like cauliflower rice or a fried egg would be perfect alongside your enchiladas. Don't forget additional garnishes like sour cream and guacamole.

How Long Does It Take to Make

Using pre-cooked chicken saves a ton of time, however even if you have to saute it first this is still a quick meal. Sautéing and mixing the ingredients together shouldn’t take longer than 10 minutes or so. Once the skillet is ready to go into the oven, it will bake for 20-30 minutes or until the cheeses are melty and the edges are bubbly. All in all, this can easily be a 30 minute meal.

Can I Save the Leftovers?

Sure thing, they are perfect for meal prepping. To eat within a few days, simply cover your enchiladas after they have cooled completely and pop them in the refrigerator. Use air tight containers like ones you probably have on hand for prepping. Freeze for up to one month or eat from the fridge within 3-5 days.

What’s the Best Way to Reheat Keto Chicken Enchiladas?

Reheat individual portions of the keto enchiladas in a microwave or toaster oven for a few minutes until heated through. If you have the time they can go into an over safe dish and bake on 350 , we recommend adding more cheese or sauce this way.

Ingredients

  • 1 to 2 pounds boneless skinless chicken breast, boiled and coarsely chopped
  • 1 tablespoon olive oil
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 cup sour cream
  • 1 (8 ounce) package cream cheese
  • 1 (28 ounce) can green chile enchilada sauce
  • 12 low carb tortillas, cut into pieces
  • 1 cup shredded fiesta blend cheese
  • 3 Roma tomatoes, seeded and diced, for garnish
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat a large skillet over medium high heat and add olive oil. 
  3. Saute the bell pepper, garlic, and onion, stirring occasionally, until the onion is translucent and the
    pepper is tender.
  4. Stir in the chicken, cream cheese, sour cream, and about half of the enchilada sauce.
  5. Mix in half of the tortillas pieces, reserving the rest for the top.
  6. After mixing the tortilla pieces with the chicken mixture, add the remaining tortillas to the top of the casserole.
  7. Pour the remaining enchilada sauce over the tortillas and sprinkle with the cheese.
  8. Bake for 20 to 30 minutes or until the edges are bubbly and the cheese has melted.
  9. Garnish with diced tomatoes and chopped cilantro or green onion.
