What are Cheesy Keto Pickle Chips?

Our keto pickle chips are a super easy snack recipe made in a muffin pan using shredded cheddar as a base for them to become crunchy, rather than a batter. The use of the muffin tin for the cooking process eliminates the need to fry the pickle chips.

What Makes These Pickle Chips Keto?

Using a bed of cheese, which is natural low in carbs and keto approved, inside a muffin pan, or tin , creates a nice crunch on the bottom and around the pickles. Therefore, reducing carbs by eliminating the need to deep fry the pickle chips in a batter which is not keto friendly. The cheese melts and then turns crispy when cooled, similar to the way keto cheese taco shells are made.

How To Make Cheesy Pickle Chips in a Muffin Pan

Prep Time: 5 minutes

Cook Time: 8-10 minutes

Ingredients for Cheesy Pickle Chips

  • 1 ½ C. Shredded Colby Jack or sharp orange cheddar cheese
  • Dill pickle slices
  • ½ tsp. Chili powder
  • ½ tsp. Garlic powder
  • ½ tsp. Paprika

NOTE : usually we shred our own cheese because pre-shredded contains potato starch. We just happen to have had this on hand the day of photographing.

Instructions for Keto Pickle Chips

  1. Preheat the oven to 400 degrees. To make keto pickle chips with cheese in muffin pan simply
  2. Blend together the chili powder, paprika and garlic powder in a small bowl.
  3. Fill the sections of a well greased mini muffin tin, or pan with the shredded colby jack cheese.
  4. Top each section of the muffin tin with a pickle slice.
  5. Sprinkle the seasoning over the top.
  6. Bake for 8-10 minutes, or until the edges of each pickle chip start to brown and crisp up.
  7. Remove, and let cool and harden before serving.

Honestly, we haven't tried but I don't think I would recommend it. If you do and have success, let us know!

How can I reheat these pickle chips?

The cheesy pickle chips are best eaten when served, the cheese crisps up in the muffin pan and gives a fried food kind of vibe. Reheating just wouldn't do them justice.
