With these delicious poppers you get to add cheeseburger stuffing and add BACON!! Sounds good, right? I just love knowing that I can eat bacon while I eat healthy. Isn’t it great?!

What is Needed to Make These Keto Cheeseburger Pickle Poppers?

Most of the ingredients and tools you need for this recipe is probably already in your kitchen! 

Ingredients:

  • 5 Large whole dill pickles cut in half lengthwise
  • 5 Bacon sliced cut in half
  • ½ lb. Ground beef
  • ¼ Onion chopped
  • 2 tsp. Minced garlic
  • 2 oz. Cream cheese softened
  • ½ C. Shredded cheddar cheese
  • Salt and pepper to taste
  • BBQ rub seasoning

Tools and Supplies:

  • Cutting board
  • Sharp knife
  • Skillet
  • Mixing bowl
  • Spoon for deseeding
  • Parchment paper

How Do You Make These Keto Bacon Wrapped Cheeseburger Pickle Poppers?

Add the ground beef and onion to a skillet over medium-high heat, and saute until the meat is browned and the onion has softened. Drain the excess grease. 

Season the meat with salt and pepper to taste. 

Preheat the oven to 425 degrees.

Deseed and hollow out the pickle halves. 

Place the hot meat mixture in a mixing bowl with the garlic, cream cheese and cheddar cheese. Stir to combine well. 

Stuff the pickle halves with the meat mixture. 

Wrap a slice of bacon around the pickles, and place them seam-side down on a parchment-lined baking sheet. 

Sprinkle the pickle poppers with BBQ rub seasoning. 

Bake for 15-20 minutes, or until the bacon is done to your liking.

TIP- The bacon is hard to cook to a crispy texture because the pickles give off so much moisture. To increase the crunch, precook bacon so it is closer, but still pliable to wrap.

  1. Hi, in the beginning of the recipe you write the yield is 10, which is accurate. However, in the nutrition stats at the end of the recipe, you have written the yield is 5, which is incorrect. Are the nutritional stats still correct though? Thanks.
