What are Cheesy Keto Pickle Chips?
Our keto pickle chips are a super easy snack recipe made in a muffin pan using shredded cheddar as a base for them to become crunchy, rather than a batter. The use of the muffin tin for the cooking process eliminates the need to fry the pickle chips.
What Makes These Pickle Chips Keto?
Using a bed of cheese, which is natural low in carbs and keto approved, inside a muffin pan, or tin , creates a nice crunch on the bottom and around the pickles. Therefore, reducing carbs by eliminating the need to deep fry the pickle chips in a batter which is not keto friendly. The cheese melts and then turns crispy when cooled, similar to the way keto cheese taco shells are made.

Pictured is NOT hand shredded cheese, this is a bagged version. Usually we shred our own as pre-shredded contains anti-caking agents such as potato starch. SOMEONE, who shall remain nameless (hubby) made an error at the store. I forgave him.

The cheesy pickle chips are best eaten when served, the cheese crisps up in the muffin pan and gives a fried food kind of vibe. Reheating just wouldn't do them justice.
