Keto Cookies & Cream Cheesecake

This easy keto no bake cheesecake recipe creates a smooth creamy texture that is irresistible as cold as you can get it straight from the fridge. The cheesecake filling is full of vanilla flavor and the keto crust is decadent chocolate, almost Oreo like. We won't say it is, because it isn't. But hey, it's a close reminder. One thing I learned when switching to a keto low carb diet is never expect it to taste the same as the old original you can't have anymore. Be happy with the approved version you created and like IT for what IT is. That's actually why we called it Cookies & Cream cheesecake rather than Oreo.

Is This Keto Cheesecake No Bake

Ok, so this is always controversial on websites- technically the recipe is a no bake cheesecake because the filling is not baked. Crust is pre-baked in a lot of pie and other recipes. Therefore, it is still considered a no bake cheesecake recipe even if you have to pre-bake the crust. The benefits are

  • It's Fool proof- there is no guessing when or if the cheesecake is done.
  • NO cracks- high heat or over baking can cause cracks in the cheesecake and dryness which takes away the creamy texture.
  • No bake cheesecakes set up quick and are ready to eat a lot faster.
  • Because of all the above the cheesecake can be a lot creamier and smoother.

Keto Cheesecake Is A Blank Canvas

The process for this cheesecake is basically the same no matter what flavor profile you choose so have fun with it. For example, vanilla, chocolate and lemon are a few ideas for the base filling. Aside from the filling, there are many different types of crust- regular Pie crust, no crust, chocolate, graham cracker (the keto version) pumpkin spice and many more. Top them with fruits, chocolate, etc.

Keto Oreo Cheesecake or Cookies and Cream

So we didn't call our Oreo Cheesecake, BUT an actual Keto Oreo cheesecake was the inspiration behind this recipe. I ordered a piece of gluten free, sugar free Oreo cheesecake from a restaurant and it was amazing. I could not believe how much the crust tasted like Oreos, it almost made me question if it was really ok for me to eat. My guess is, because it was so good, the restaurant must use some expensive company bought chocolate cookies. Instead of ordering cookies, we made a chocolate cookie crust. After all, the cookies just get crumbled for the cheesecake crust anyways.

Making Our Easy Keto Cheesecake Recipe

A tart pan or spring form can be used. Makes 3 tarts or 1 8" cheesecake

Crust Ingredients

  • 1 ¼c almond flour
  • ¼ c unsweetened Hershey's Special Dark Cocoa Powder
  • 1 tablespoon Lakanto Monkfruit Sweetener (promo code below) (or sweetener of your choice)
  • 3 tablespoon butter, melted
  • Pinch of Salt
  • ½ teaspoon instant coffee or espresso powder (optional)

Filling Ingredients

  • 1 block cream cheese, softened
  • 1 cup room temperature unsweetened almond milk
  • ½ envelope Knox unflavored gelatin
  • ½ cup powdered sweetener
  • 2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350
  2. In a medium bowl, combine all crust ingredients, mix well.
  3. Press mixture into tart or spring form pan
  4. Bake for 10 minutes in fully preheated oven.
  5. In a separate bowl-beat cream cheese with electric mixer until smooth
  6. Dissolve gelatin into the almond milk, pour into cream cheese.
  7. Add powdered sweetener and vanilla, mix until smooth.
  8. Pour into pre-baked crust, level and refrigerate for at least 3 hours. Best if left overnight.
  9. Cut and serve!

Notes

It is important to make sure your cream cheese is SOFTENED. If it is not soft enough you will get chunky pieces that won't break down.

SLOWLY add the milk while electric mixing or it will splash all over.

  1. I make this all the time and I was never one to make a cheesecake, it doesn't really taste keto either. I don't mind baking the crust because it is the filling that is a problem, so this is great and funny you mentioned that too.
