Sometimes life is just too crazy.  School, kids, sports, work, yada yada. Even those of us with nothing to do all day can get tired of cooking. I am constantly looking for easy keto instant pot recipes to make when cooking just isn't on my schedule the desire is gone.

Do you feel like the struggle of finding new things to make just keeps getting worse? One would think that it would be easy,  choose a protein, healthy fat and vegetables. Easy. Done. Nope. Don't you just wish someone would tell YOU what is for dinner for once? 

At least with this recipe, there is no pain of the cooking process.

What is an Instant Pot?

An Instant Pot is essentially a pressure cooker. The phrase "Instant Pot" is the brand.  Sort of like how a slow cooker or slow cooker recipes are often called Crock Pot. Instant Pots have other features such as steam, saute, rice, beans, meat, slow cook and more.  For the longest time I said no, I am not getting caught up in this trend. 

Until I was gifted one....  it is THE BEST (no really, I know you see that term thrown around a lot in the food blog world, but it really is) small kitchen appliance. I'm always using ours now. Making our Keto Instant Pot Ribs

Ingredients

  • 3 to 4 pounds country style pork ribs
  • 1 tablespoon golden sweetener 
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • ¾ cup beef broth
  • ½ cup barbecue sauce 
  • 2 teaspoons xanthan gum OR 1 tablespoon cornstarch with 2 tablespoons water

Instructions

  1. Mix together sweetener, garlic powder, smoked paprika, onion powder, black pepper, ground cumin, beef broth, and barbecue sauce.
  2. Put the pork ribs into the electric pressure cooker. Cover with sauce.
  3. Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook on high pressure for 45 minutes. Naturally release for 5 to 10 minutes before a quick release.
  4. Remove keto instant pot ribs from pressure cooker and reset the pressure cooker to “saute.” Whisk in xanthan gum or slurry (cornstarch mixed with water) and stir until the sauce thickens. Place pork ribs back in the pressure cooker to coat with sauce.

What Barbeque Sauce To Use For Keto 

We make my own keto barbeque sauce! They are so easy to make, fits into the keto diet, and I can use it like any other bbq sauce you buy on the shelf. Easy, delicious, and quite frankly better than store bought. And If you don't want to make your own, look online for approved sauces that will work.

Can I Substitute Vegetable Broth For Beef Broth In Recipe 

Absolutely! If you don't have beef broth or prefer the taste of vegetable you can easily swap it out. And I would even say chicken would work as well. It will, of course, vary the flavor of your keto instant pot ribs, but since you don't use a ton of it, you won't find a huge effect on the overall flavor.

How To Store BBQ Ribs

Store any leftovers in the fridge for up to three days. Use your best judgment on if you feel the ribs are going bad, then toss them out. They reheat nicely and are a great option for meal prepping for the week. 

Best Way to Reheat Country Ribs 

You can warm them up in the microwave, or even the oven. If you do the oven, add a little water to the bottom of a pan, lay down your ribs, and then wrap in aluminum foil. This will help prevent them from drying out as they warm up. Then heat until warmed through and serve. You might find you want to add a bit more sauce to them if they appear dry at all. 

Can You Freeze BBQ Country Ribs 

Ribs can be place in an airtight container that is freezer friendly. Then store in the freezer for up to a month. Thaw in the fridge the night before you plan to serve them. Then reheat how I listed above and enjoy. Because they will need more sauce at this point, use a sugar free sauce to add more.
