Banana Belgian Waffle Recipe
Sitting down in front of these Belgian waffles will literally take you back to a small town diner serving up homestyle food, probably in the south. The first time I had them made with bananas was when they were made in a cast iron waffle maker over a flame fueled stove. No, I am not THAT old, it really wasn't too long ago. Now you can skip that hassle and use an electric waffle maker.
Simple. Done in about 3-5 minutes.
Choosing the right Waffle Maker
Almost every department or home goods store you enter, will likely have electric waffle makers. They can range from about $15-$100. With waffle makers you get what you pay for. The cheapest will be lacking in all the settings and probably not get as hot. Ours is a Waring Pro that flips. There is 1 setting for heat and a power button. Easy. It was around $50.
Why should I choose one that flips?
A waffle maker that flips will usually return waffles that are bigger, fluffier, more light & airy. When you pour the batter in, the waffle starts cooking immediately on that side, flip and the batter settles, creating and popping air bubbles at the same time. Therefore, causing the waffles to rise more. That is all I know. As for the science..... you will need to ask a baker.
Easy Banana Pancakes Adaptation
We adapted this recipe from our easy banana pancakes recipe. Once we purchased a waffle maker we just liked to use that instead. The easy banana pancakes are great, just heavier and not really crispy. Bananas add a lot of moisture to a recipe which can take forever to cook out of a banana pancake. The same holds true if you are using an alternative like almond flour.

Making our Banana Belgian Waffle Recipe

Ingredients
- 2 cups all purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons sugar
- 1 egg, separated
- 2 overripe bananas, mashed
- 1 ½ cups milk
- 1 tablespoon vinegar
Instructions
- Preheat waffle iron according to manufacturer’s instructions.
- Mix vinegar into milk and set aside to curdle.
- In a medium bowl, beat egg yolk, bananas and sugar.
- Add dry ingredients and continue to mix. Pour in the curdled milk. Mix.
- In a small bowl, beat the egg white to stiff peaks.
- Fold in the egg whites.
- Grease waffle iron according to manufacturer’s instructions.
- Scoop batter into waffle iron (approximately ¾ cup batter depending on your waffle iron).
- Cook until the waffle iron stops steaming or the waffle reaches your desired color.
- Serve with assorted nuts, chocolate chips, syrup, honey, and/or sliced bananas.
Servings will vary on the size of your waffle maker. Ours made 3 big waffles.

Thanks for offering a good recipe, I’m looking forward to veganizing them. I’.ll use flax seed «eggs» and a little yeast (around a tsp), which I always add to my Belgian waffles (that and baking powder), makes them super fluffy! If you make extra batter with yeast, just remember to put it in a big bowl in the fridge, as it will rise a lot! I learnt the hard way, LOL
