Low Carb Chocolate Chip Cookies
Closest to the REAL Thing! No really.
Hey everyone! So, for the last week, I have been working on a new low carb chocolate chip cookie recipe that will satisfy my cravings. They have been hitting me hard. The worst part about getting into ketosis is kicking the old cravings and habits. It takes me eating low carb for a hot minute to ditch the cravings.
Nuff said. This cookie recipe is extra special cause it uses Carbquick, which makes it easy and delicious. We have also provided other versions for those who don't like to use Carbquik.
Finding Inspiration and Motivation
I was being inspired by a recipe from one of my favorite food bloggers, I Breathe I'm Hungry- Her Keto Lemon Sour Cream Muffins are simply delicious. After I started to make them one day and realized I didn't have all the ingredients. Sigh.... wait !
So then instead, I played around and ended up with yummy chocolate chip muffins. Which.... we then eventually turned into cookies! She hit the nail on the head adding sour cream. That ingredient absolutely makes her muffins and these cookies taste spectacular.
Low Carb Chocolate Chip Cookies Were Born
Originally, this recipe was made with the Carbquik baking mix. I was just starting out eating low carb and looking for everything easy. Not all keto chocolate chip cookies can be made with with this mix, so we made some notes below to help those who don't care for Carbalose.
What is Carbquik?
Carbquik is a brand name for a low carb baking mix used in all kinds of preparations like muffins, cookies and crusts. The main reason some people refuse to use it on keto is that the main ingredients is Carbalose flour. Carbalose flour is a mix of different wheat products. Therefore most strict keto eaters will skip it. Those who are following a low carb diet with no gluten allergy like it because Carbquik produces very similar results to all purpose flour.
What is the carb difference between Keto & Low Carb diet?
The main carb difference between Keto & Low Carb is of course the carb count. For keto the daily recommended is under 50 carbs, most do under 40.
For low carb the daily recommended is 100-150 carbs per day.
Making The Recipe
Makes 18-20 cookies. The Cookie base is 98 calories and 1 net carb per cookie. Depending on what you use for add-ins this will change so plug the ingredients into a nutrition analyzer or your fitness app for specifics.
Ingredients
- ½ stick unsalted butter, softened
- ½ cup sweetener (I used granulated erythritol)
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon psyllium husk powder, vital wheat gluten or xanthan gum
- ¾ cup Carbquick *
- 1 teaspoon baking powder
- â…” cup sour cream
- Add-ins of your choice- we used Lily's sugar-free chocolate chips
Instructions
- Preheat the oven to 350º.
- In a large bowl, using an electric mixer cream butter, sweetener, eggs, and vanilla.
- Add dry ingredients and mix well.
- Whip in sour cream. Stir in chocolate chips.
- Spoon onto a greased sheet pan. (about 3" scoops)
- Bake for 10 mins or until edges are golden and cookies are set.
- NOTE* these will not brown on top as much as they do on the bottom. You may peek in the oven and think they aren't cookies. Lightly tough with your fingers for firmness, check the bottom for browning.
- Cool on wire rack.

Keto Chocolate Chip Cookies
Almond flour alternative- Use 3 eggs instead of 2. Start with ½ cup almond flour. You may need a bit more sour cream to get the right consistency.
Coconut flour alternative- I have not made this exact recipe with coconut flour so try at your own risk. If I was to try, I would use 3 eggs instead of 2. as well as 2 additional tablespoon of butter and start with ¼ cup of flour.

Carbquik Cookie Notes
Additional notes about Carbquik, low carb, and keto. The baking mix is one of those products that people on strict keto say NO NO. I am very much fat adapted and have never been kicked out of ketosis from eating it. It is not on the list of approved keto foods. I push my carbs to about 60g a day.
Can Sugar-Free Cookies Taste Good
I get asked this a lot and the answer, for me, is yes. If you are like my husband and very picky, then no. Because taste buds are so different, it will really depend on the person. Some people pick up on sweetener flavors and alternative flour differences very easily.

Best Way To Store Low Carb Chocolate Chip Cookies
I recommend storing these cookies in an airtight container on the counter or fridge. If you are going to layer these cookies in a container simply place a layer of parchment paper or wax paper in between to ensure they don't stick together.
Can You Freeze Sugar-Free Low Carb Chocolate Chip Cookies
Yes! You can easily freeze these cookies with no troubles. Just allow your sugar-free low carb chocolate chip cookies to fully cool on a baking rack. Once cooled place in an airtight container that is freezer friendly or in a freezer bag. Then toss in the freezer for up to three months. Thaw on the counter and serve!
Best Chocolate Chips To Use for Cookies
For these Carbquik cookies, I used Lily's sugar-free chocolate chips. You can use any low carb or keto chocolate chip you like. Or dice up a chocolate bar and use that for the cookies.
How Long Will Low Carb Chocolate Chip Cookies Last
You can expect these cookies to last anywhere from 3-4 days sitting out. They will begin to dry out and become less desirable. If you know you are not going to eat them all, consider freezing them. This is a great keto low carb snack option to break up the work day.

Tried it with just 1/2 cup almond flour and don't feel it was enough. I want to try carbquick but don't have the money so trying with what I have.. Maybe a few more tbsp or 1/4 cup of almond flour more?. :/
If you feel it needs more almond flour it can't hurt to try! The dough is light and fluffy though. Have you seen the Facebook LIVE video I did ?
I used 3/4 cup almond flour. I also used xanthangum(3/4 teaspoon). We like nuts so I added some slightly crushed walnuts with the lily chocolate chips. I did have to cook for 12 minutes. Because we like icing I made icing with swerve powered sugar, melted butter, vanilla and half & half. So delicious, Yummy!
