Low Carb Chocolate Lasagna 

(or sex in a pan if you prefer)

We have never really been a fan of the phrase "sex in a pan" for this dessert, therefore if you see it on social media we will be referring to it as low carb chocolate lasagna.  Oh , by the way,  this is also an approved keto dessert recipe. Many people don't realize that a ton of low carb recipes are also keto. 

Low Carb vs. Keto 

Basically, low carb and keto are the same thing.  Both diets eliminate refined sugars and consume more fat than carbs.  When following the keto diet carb intake is usually restricted to 40 carbs daily, max.   A low carb diet , around 75-150. For most low carb recipes, the ingredients are all keto approved but may have more carbs per serving than your macros allow.  It comes down to what fits into your day. 

About the recipe

This recipe starts with a super fudge like brownie that must be totally and completely cooled before layering. The second layer is mint flavored and cream cheese based. Yum, right?  On top of that, chocolate!  Sugar free chocolate pudding and then of course the super creamy whipped cream topping.  See tips below for the perfect whipped cream.

Tips for the perfect whipped cream

  • Start with a bowl that has been chilled in the freezer.  (I even place the beaters in the bowl)
  • Use very cold cream.
  • See the trend here?  Chill everything!
  • If using a hand mixer, slowly move it around the bowl while whipping in a "figure 8" pattern. 
  • Don't stop mixing! 
  • If sweetener and vanilla is called for, add it into the cream before mixing. 

Why is it called "Lasagna"?

I know, some of you hate it when you see a recipe called something that it clearly isn't.  I do too,  I do really! We get it, but in our defense we are using quotes to acknowledge that we realize this isn't a traditional lasagna. Please forgive us.  The recipe is called "lasagna" because of the multiple layers, pan used to make it and that familiar square shaped piece that's perfectly showing all the layers. This keto dessert recipe has four layers plus the sprinkle of sugar free Andes mint chocolate candies on top. There may be no noodles, ricotta, meat and cheese but there is brownie, chocolate, mint cream, whipped cream and more chocolate mint.  Hopefully we have convinced you to be ok with this recipe being called "lasagna".  Remember...  the quotes make all the difference!

This recipe will be listed by layers, don't let it overwhelm you, it's actually really easy! 

TIP*  I use one bowl and just wash it in between adding the layers

Ingredients: 

BROWNIE (Bottom)

  • 3 eggs, room temperature
  • ½ cup butter, melted
  • ½ cup golden sweetener (brown sugar alternative) This gives a rich flavor , SAVE with Code MELISSA20
  • ¼ cup granulated sweetener
  • 1 teaspoon vanilla extract
  • ¾ cup cocoa powder
  • 1 ½ cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Directions: 

  1. Using a mixer (hand or stand), cream butter and sweeteners. 
  2. Pour eggs in one at a time and whip until fluffy.  Add vanilla. Mix. 
  3. Add all dry ingredients and mix until well combined. 
  4. Spread into a thin layer in a 13x9 buttered dish. 
  5. Bake 20-30 min or until set (toothpick inserted in center comes out clean)
  6. Let cool completely.

MINT 

  • ¾ cup almond milk 
  • 3 tablespoon powdered sweetener
  • 2 blocks cream cheese, 16 oz softened 
  • 2 teaspoon mint extract
  • 20 Andes SUGAR FREE Mints, chopped

CHOCOLATE

2 boxes SUGAR FREE chocolate pudding, prepared as directed on the box (we almond milk, it is VERY low in calories)

OR try our homemade keto chocolate pudding.  

WHIPPED TOPPING

  • 1 ½ cup heavy cream
  • 3tbsp powdered sweetener
  • ½ teaspoon mint or vanilla extract

Layering Low Carb Chocolate Lasagna: 

MINT -  whip softened cream cheese with sweetener, add extract, slowly pour milk while mixing until well combined and spreadable. Fold in andes.  Spread on cooled brownie.

CHOCOLATE-  spread prepared chocolate pudding onto the mint layer. 

WHIPPED CREAM-  using a very cold bowl and beater, whip cream, sweetener and extract until stiff. Spread onto chocolate layer.

Top with additional andes if desired.  Refrigerate at least 2 hours or until set.

  1. Can you use something other then sugar free pudding? I have a sensitivity to the low sugar sub used in these products.
