Simple keto tip- add a few tablespoons of REAL butter to each of these dishes to up the fat content. Adding fiber does not negate the carbs. It is a common misconception that adding fiber to a recipe will reduce the amount of carbs since to get net carbs, you subtract fiber. That isn’t how it works! Long story short, you are still eating those carbs. Adding fat is a better idea.
Slow Cooker Frittata– Simply swap out the milk for cream. If you are concerned about the natural sugar from the sundried tomatoes, just use less. The amount per serving will be low!
Chipotle Barbacoa– This copy cat barbacoa has a nice balance of smokey and spice. At only 1 net carb per serving you can’t go wrong. Enjoy it alone or as a salad like pictured.
Cheesy Buffalo Chicken and Cauliflower- this recipe is made in the instant pot but can easily be switched to slow cooker. Since pre cooked chicken is used, it is still quick dish. Loaded with cheese and packed with flavor it is one of the best comfort food keto slow cooker recipes.
Caldo de Pollo ( Mexican Chicken Soup)- this soup is gorgeous. If you aren’t a fan of spice simply skip the jalapeno. Swap carrots for radishes OR if you aren’t that sensitive to natural sugar you can just cut back on the carrots. 1 medium carrot has about 4 net carbs adding maybe 1 carb to each serving of this soup.
Balsamic Pot Roast- for this recipe you will want to scale back the amount of onions used to keep the carb count down. Most people don’t realize that one medium onion can have about 8 net carbs. Fall apart, tender juicy pot roast, I am drooling as I write this.
Spinach and Artichoke Dip– P.S- neufchatel cheese = cream cheese. This recipe makes a great dip for celery, bell pepper slices or pork rinds OR stuff it into chicken!
Slow Cooker Meatloaf and Simple Gravy– super cute, yes I said cute! Look at these individual meatloaves from the slow cooker! Feel free to increase the fat content by adding bacon to the mix.
Crock Pot Chicken Caesar– I have made this recipe numerous times. It is one of my absolute favorites. This is something the whole family will eat. I swap out the plain yogurt for cream cheese to lower the carbs and increase fat. Of course, use keto bread.
Cabbage and Keilbasa– Rose’s slow cooker cabbage and keilbasa dish is another one the whole family will love. My daughter usually turns down cabbage, but really like this version. Skip the apples to make this keto, if you are eating low carb and allowing yourself a few more carbs daily it should be fine.
