Easy Low Carb Peanut Butter Fudge

with Sugar Free Chocolate Chips! 

It is said that once the body enters ketosis and begins to adapt that all sugar cravings disappear. But what about those days when you just simply want a decadent dessert like this keto sugar free fudge? With the addition of Lily's Sugar Free Chocolate Chips sending this low carb peanut butter fudge recipe over the top, it is hard to resist whether you have cravings or not. 

A little treat once and again is not going to hurt anyone, don't worry, this is so decadent that devouring the pan will not happen either. A small square is all it will take to satisfy the sweet tooth.

What Peanut Butter is Best for Keto?

For strict or paleo keto dieters, peanut butter is a big no no.   It is said that because peanuts are technically a legume, they are not on the approved ketogenic food list. 

For those keto-ers who allow peanut butter into their diet it is best to choose an all natural type. Regular store or popular "kids brands" are high in added sugar and preservatives.  All natural peanut butter should have literally nothing other than just peanuts and salt on the ingredients label.

What brand all natural peanut butter do you use?

In our house we use either Teddy's or the Hannaford brand.  They both have an amazing roasted flavor. If you have a natural food store near by, check in with them, they may have a machine to make your own.  Our small town store use to have nuts and grinders to make your own! 

What is Keto Buckeye Fudge?

Keto buckeye fudge is a low carb fudge alternative to the traditional buckeye fudge recipe- a layer of peanut butter fudge with a layer of melted sugar free chocolate chips ganache on the top.

Keto Peanut Butter Chocolate Chip Fudge

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Servings: 10

Net Carbs per serving: 3 net carbs per serving

Ingredients:

  • 1 cup Heavy Whipping Cream
  • 2 tablespoon butter
  • â…“ cup powdered sweetener
  • 1 teaspoon Vanilla extract
  • ½ cup all natural peanut butter
  • â…“ cup Lily’s baking chips

Instructions:

  1. Heat the heavy whipping cream and butter in a sauce pan on medium until melted. 
  2. Whisk in the powdered sweetener until well combined, and bring the mixture to a low boil.
  3. Continue to cook until mixture thickens and begins to turn a bit of a light brown in color.
  4. Once thickened, remove the mixture from the heat, and whisk in the peanut butter  and vanilla until smooth. 
  5. Pour the mixture into a parchment lined loaf or other small pan.
  6. Wait for the mixture to cool for a few minutes before topping with chocolate chips so they stay on the surface.
  7. Chill in the fridge for at least 4 hours. 
  8. Slice the fudge into 10 pieces and serve. Store remaining fudge in an airtight container in the fridge or freezer.

RECIPE NOTE: 

it is possible to skip the stove top method and do this in the microwave, we have done it many times!  Simply follow the steps above using a microwave safe dish instead.  Heat cream and butter in the microwave until very hot. Whisk in peanut butter and powdered sugar until smooth.

  2. I didn't have cream on hand so I subbed canned full cream coconut milk and it separated in the pot. I continued with your instructions, it still firmed up but had a layer of coconut oil on top of the fudge. Any guidance as the taste was great with coconut milk?

  3. If using natural peanut butter from a store when the peanuts are ground fresh, do I need to add salt to the recipe for it to taste good?
