Cole Slaw Dressing Recipe- Tastes Like KFC!

The addition of kale to this slaw adds a great crunch and lots of antioxidants, with a homemade cole slaw dressing that makes it taste just like KFC's!

Use with any bagged slaw mix or try it on our Kale Slaw 

This recipe was born from one of those "use whatever is in the fridge" instances.  I was making my amazing Slow Cooker Pork ( a fav for summer) and needed a cole slaw recipe. KFC cole slaw has always been our favorite so we set out to make it taste like that.  See, we like to pile the pork on top of cole slaw inside of a soft tortilla wrap.  It is kind of like a Memphis City BBQ meets Mexico.

I knew I had all the basic ingredients, it was actually the veggies that I didn't think I had enough of.  I had a little cabbage and a few carrots.  This was not going to be enough to make a batch to feed everyone.  So, I went out to the garden and picked a zucchini.  Then I remembered I had a bad of beautiful kale.  Perfect.  I absolutely love the flavor of raw kale so I knew this would work and taste amazing.

I have made this multiple times and everyone loves it.  This kale slaw and the cole slaw dressing recipe works great together and has been a huge hit at potlucks & BBQs!

How To Make The Cole Slaw Dressing Recipe

Ingredients

½ cup Mayonnaise
Juice of 1 lime
1 teaspoon Apple Cider Vinegar
3 tablespoons White Sugar
½ teaspoon celery seed
¼ teaspoon Onion powder
¼ teaspoon Garlic powder
pinch Salt & Pepper

Instructions

In a small bowl, mix the lime juice, vinegar & sugar until dissolved.

Add mayonnaise and seasonings. Mix well.

Note*  You can adjust the creaminess by adding a little less or a little more mayo. 

FOR THE Kale Slaw

Ingredients

  • 1 cup rough chopped kale
  • 2 carrots
  • ½ small head of green cabbage
  • 1 small zucchini

Size of veggies will vary so slaw will always be slightly different each time you make it unless you process each vegetable first them measure it.  I don't bother.

Instructions

Add each vegetable to a food processor and shred.

Mix all veggies together in a bowl with a pinch of salt & pepper and the cole slaw dressing above.

TIP* LET FINISHED SLAW SET IN THE REFRIGERATOR AT LEAST 1 HOUR FOR BET RESULT.
