Whip up these easy keto PBFit Cookies today! A quick and easy PBFit cookie recipe that requires no baking. Just mix, form balls and smash down to form little cookies. PBFit keto cookies are a go-to treat for me right now.

Nuts are my thing, and these PBFit cookies are loaded with peanuts and ground-up mixed nuts. They offer a flour-less base, so you don't have to worry about cooking them. I used a mix of walnuts, peanuts, almonds, and pecans. The nuts add so much to these cookies. Each bite is filled with nutty peanut butter flavor.

Can I Use PB2 In Replace Of PBFit In PBFit Cookie Recipe

I don't really notice a huge difference between PB2 and PBFit. So yes, feel free to swap out if that is what you have on hand. You can replace the PBFit with any peanut butter powder. Or you can even replace it with regular peanut butter as well. Just watch the sugar content to ensure you stay keto-friendly. Look for a keto peanut butter that you enjoy. 

If you swap with say natural peanut butter or even almond butter you need to take note that it will change the macros in the recipe.

Can I Replace Stevia With Another Keto Sweetener

You can, but you need to remember that each sweetener brings a different taste to the cookie. So by swapping you will find that the flavor of these peanut butter cookies will alter a bit. But, I think if you measure correctly and do correct conversions it will be fine. Look for a low carb sweetener. 

What If I Am Not Low Carb - Replacement For Sweetener

If you are not low carb, reach for maply syrup or honey to replace the sweetener in the recipe. It will add sweetness and the liquid texture will help to mold the cookies into the shape they need to be.  

Can I Double This PB Fit Cookie Recipe 

Yes! You are welcome to double or even triple the recipe. Depending on how large you scoop cookies, this recipe makes on average 20 cookies. It takes a total of 8 minutes to make a full batch of cookies! Which is awesome, and a great way to prep for snacks for the week!

Do PBFit Cookies Freeze Well

To freeze these keto PBFit Cookies you need to lay out all the cookies on a baking sheet. Make sure they are not touching and toss in the freezer for about 30 minutes. Then once fully frozen you can transfer into an airtight container or freezer bag. Then toss in the freezer and they will not stick. 

If you don't allow them to freeze first, when you go to put them into a container they will stick together. Now if you want to individually wrap them in wax paper or even sealable bags, you can do that and skip the pre-freezing them.

Ingredients

  • â…“ cup of room temperature Water
  • 60g PB fit (½ cup) *peanut butter powder, can be replaced with regular peanut butter)
  • 120 g coconut flour (1 cup)
  • 200g mix nuts (almonds, walnuts, peanuts, and pecans)
  • 2 teaspoon Stevia extract powder
  • Pinch of salt
  • 3 tablespoon Coconut oil
  • ¼ cup sugar-free syrup

Instructions

  1. In the same bowl you have the water, add the PBfit and stir until creamy, leave aside.
  2. If using regular peanut butter instead, skip the first step, use creamy peanut butter and still add some of the water if necessary. (it will be necessary if dough it’s too dry)
  3. Using a food processor start by adding the coconut flour, followed by the nuts, stevia, salt, syrup, and the creamy peanut butter you made in the first step.
  4. Pulse until you have achieved a dough like consistency, in the middle of this process make sure to scrape the sides, all the ingredients will be combined.
  5. Once ready grab a measuring tablespoon and fill it with dough, grab the measured dough with your hands and make a ball, then flatten them to make the cookie, place it on a cookie sheet.
  6. Repeat the last step until you run out of dough.
  7. Maintain cookies in an airtight container in the fridge.

Notes:

*You may use another sweetener instead of stevia, most likely quantity will be different.

*If you don’t follow a keto diet, you may use another syrup such as maple syrup, even honey.

*If using regular peanut butter or another syrup macros will change.
