What is Chicken Cordon Bleu
The short explanation- Chicken Cordon Bleu is a popular French dish of either crispy chicken or veal stuffed with cheese and ham then covered in a rich cream based sauce. Though there are many variations of the recipe, common flavor notes include: lemon, butter, Swiss cheese and smokey ham. Traditionally the chicken is coated in bread crumbs and pan fried or oven baked crispy.
How is this Skillet Meal Keto Approved
This recipe is very low in carbs naturally using ingredients like chicken, ham and cheese. Because we skipped the breading, our chicken cordon bleu skillet is keto and/or low carb approved. You can find recipes out there for a coating with almond flour, however we wanted to make a quick skillet version of the baked dish. If we were stuffing whole breasts we'd coat them.
Meal Prep Keto Chicken Cordon Bleu
Our skillet chicken cordon bleu recipe cooks up fast and reheats perfectly making it ideal for meal prepping. Meal prepping is a great way to help stay on track by knowing ahead what you will be eating. If you're anything like me, giving in to temptation is easier when you don't have food to grab quickly. Simply scoop into your favorite meal prep containers. Reheat in the microwave for 1 minute at a time, stirring in between. Our tests showed the creaminess remains!
Making This Skillet Recipe is Easy
You will need:
- Your favorite skillet & wooden spoon
- Diced chicken breast
- Sliced or cubed ham
- Provolone cheese (not Swiss, I know it isn't traditional, but see note* in recipe card) Cubed or Sliced into ¼ pieces. (Cut in half, then half again)
- Almond milk or Cream
- Butter
- Lemon juice or mustard
- Parsley to garnish
- Salt & Pepper to taste (Note* browning ham brings out salt)
What to do (full recipe card below):
- Heat the skillet over medium high heat, drizzle with olive oil.
- Saute chicken until golden, add the ham and cook until it browns here and there, about 2 minutes.
- Add butter, dairy and the acid. Mix well. Once bubbling reduce to low heat.
- Stir in cheese. Continue stirring until cheese is melted and sauce is thickening.
- Heat through for a few minutes then serve garnished with parsley.
Topping Ideas for Keto Chicken Cordon Bleu
- Shredded or shaker parmesan cheese.
- Toast a piece of keto bread, butter it and then crush it up all over the top.
- Crushed Wisps Cheddar "crackers"
- Crispy bacon

Ingredients
- 12 oz chicken breast, diced
- 8 oz deli ham, sliced or cubed
- â…” cup unsweetened original almond milk
- 2 tablespoon butter
- 1 teaspoon lemon juice or ½ teaspoon mustard
- 6 ounces of provolone, sliced or cubed
Instructions
- Heat the skillet over medium high heat, drizzle with olive oil.

Notes
About the cheese- We chose to use provolone instead of Swiss because it melts smoother. Swiss can actually get very tough and chewy rather than melting down. Another cheese option is Gruyere or White sharp cheddar. All provide a hint of flavor that goes perfectly and they melt smooth.
Salt- Cooking ham, especially sauteing it, can bring out the salt. Take care when adding salt to this dish. Ours is always salty enough from the ham and we therefore we just add pepper
Make it a Meal- Consider adding broccoli or caulifower to add bulk and make the chicken cordon meal a more full keto meal.

No haha, but there are plenty of low carb options out there including zoodles, shirtaki noodles and even cauliflower rice would be good.
