HOWEVER, they are also super high in fiber.  For each gram of fiber you can subtract a carb gram, lowering the carbs in chia seeds.  Because fiber counteracts the carbs on a 1 to 1 ratio, these are acceptable on a low carb and keto diet.

Ingredients for this Keto Pudding Recipe

  • ¾ cup ground chia seeds
  • 2 ¼ cup unsweetened vanilla almond milk
  • 1 scoop low carb chocolate protein powder
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • ¼ cup monkfruit (or sweetener of choice)

Recipe Directions

Gather up all the ingredients before you begin - this makes it easier as you cook in the kitchen.

Heat the almond milk in a saucepan over medium heat. Once it becomes hot, dissolve the erythritol in the milk and set aside to cool.

Once it has cooled, pour into a mixing bowl, add the ground chia seeds to the bowl. Make sure the chia seeds are very finely ground - a coffee grinder works well for this.

Add the cocoa powder, protein powder, and vanilla extract. Whisk well until combined - the chia seeds will begin to expand and form a pudding texture.
