My absolute all time favorite appetizer, next to hot wings, are bacon wrapped jalapeno poppers. For years and yearsss my mom would make them for special occasions- New Year's Eve, Football games and such. Instead of cutting the jalapenos in half and stuffing them with the cream cheese filling, we would core the peppers and pipe the cream cheese mixture inside, then wrap in bacon. This helped to hold the cheese in as well as give the peppers a ridiculously crisp outside. Sigh... now I want them. OK.. moving on...
Our keto jalapeno popper cheese puffs are different from the bacon wrapped jalapeno appetizer in the way use a mixture to form bite sized balls and roll them in the bacon. The addition of almond flour makes them just a little more decadent. A cheesy, bacon crusted mini biscuit almost. They are a great way to up the fat in your keto diet if you aren't hitting your macros!

But are they cheese puffs? Ok, so they aren't cheese puff in the sense that you may be thinking. There is no florescent orange cheese to stain your fingers or hard crunch to tear the roof of your mouth. (Did that happen to anyone else pre-keto days, or just me?) These cheese puffs are light, airy and creamy. The addition of almond flour and egg to the mixture creates a little bite that will puff up and be a cross between a fritter and a popper. Try stuffing a square of chedder cheese in the middle and rolling the mixture around it. Yes. That would be amazing.
How To Increase Fat on Keto
Hitting a daily goal of 3 or 4 different macros can be hard. On the keto diet it is recommended to maintain a 75% fat, 20% protein and 5% carb macro ration. That amount of fat can over whelm and sometimes even scare people. The fact is, the fat adds up fast and there are a few easy changes you can make to increase fat on keto:
- Eat more Avocado- avocado is high in fat and fiber
- Snack on Nuts- nuts like almonds, cashews and walnuts, A small handful can yield up to 18 grams per ounce.

Why fat is important on Keto
Fat is important on keto because, well, fat basically is everything keto. When you cut carbs down to under 40g per day and enter ketosis, you are switching your body from burning carbs to burning fat. Afterall, that is the whole concept behind the ketogenic diet. The ketogenic diet IS a high fat (the good kind) diet. When you eat a low carb , high fat diet your body enters ketosis- the process at which the body burns fat for fuel instead of carbs. Therefore, it is important to hit your fat marco levels daily. This will help maintain ketosis.

Ingredients
- 4 oz. Cream cheese, softened
- 1 ½ c. Shredded cheddar cheese
- 1 egg, beaten
- ¼ cup almond flour
- 1 teaspoon baking powder
- 2 Jalapeno peppers finely chopped
- 6 Slices of bacon, cooked crispy, crumbled
- 1 tablespoon Ranch seasoning
Instructions:
- In a small mixing bowl, whip the cream cheese until smooth.
- Mix egg into almond flour until well combined.
- Add Shredded cheddar cheese, jalapenos and ranch seasoning to the cream cheese, mix well.
- Stir in almond flour egg mixture until fully incorporated.
- Crumble the bacon pieces and place them on a plate.
- Form a tablespoon of the jalapeno mixture into a ball, and roll it in the crumbled bacon.
- Place on cookie sheet, refrigerate 30 mins.
- Preheat oven to 425. Bake 10 minutes or until golden and puffed.
- Allow to cool a few minutes before eating.

Can I Cook Jalapeno Poppers Cheese Puffs In The Air Fryer Instead of Oven
I have not tried making these in the Air Fryer but you are welcome to try. I would recommend only cooking a couple at one time to see if they will hold up and how you like them. Then if it works, batch cook the rest. Just make sure to leave room between each cheese puff so it can cook all the way around.
What Can I Serve With Jalapeno Popper Cheese Puffs
Generally, we eat these as a snack or serve them as an appetizer for the evening when we have guests over. You could pair with a keto dip, eat them alone, or make a variety of appetizers people can pick and choose what they want.
Best Way To Store Jalapeno Popper Cheese Puffs
You will want to refrigerate your cheese puffs after they have cooled down from the oven. They are best eaten day one, but they do save pretty well. They won't have the exact same texture as day one but still will be tasty.
How To Reheat Jalapeno Popper Puffs
You can warm them up in the microwave, toaster oven or even place them on a baking sheet and reheat in the oven. Just heat them up until they are warmed through. Try not to overheat or it can dry them out.
Can I Use Pre-Cooked Bacon For Jalapeno Poppers
Yes. Since you are crumbling up the cooked bacon you can use pre-cooked bacon you have on hand. Just dice it up so it is small pieces and go for it. I have also been asked can turkey bacon replace with regular. Yes, you can swap them out if you want, it offers a different texture but should still work well in the recipe.

At what step do I add the baking powder?
just a guess but I would add it to the egg/flour mixture just before step 4.
