Potatoes are a common guilty pleasure and for good reason(s)- potatoes can be paired with almost any meat for dinner, they are cheap and filling. When switching to a low carb or keto diet the potato can be hard to give up. It gets easier, I promise, especially with recipes like this cauliflower mash. This dish is one of those that is what I like to call "naturally keto or low carb". Basically, when the ingredients are every day items that anyone would eat, nothing special going on in this dish. A commonly asked question around my house, usually from my daughter- "is this normal (INSERT NAME OF FOOD) or is it yours?".
Making Cauliflower Mash
Making caulifower mash is really so simple. The process is similar to the same way one would make mashed potatoes. First, start by cooking the cauliflower (like you would potatoes, but in this case we aren't boiling). When the cauliflower is fork tender, add cream and butter, mash then whip with a hand mixer to remove lumps. From that point you can included any mix-ins you wish, like we did here, cheese, bacon and such. This keto side dish recipe reminds me of a loaded baked potato in creamy, smooth form. Devour worthy.
Now if you don't have an instant pot... you NEED one like yesterday! This thing has saved my life, ok that is a bit of an exaggeration, however it has made things a lot more interesting. Until there is an Instant Pot in your kitchen one does not realize the uses are endless. The Instant Pot can saute, slow cook, steam and then has preset buttons for things like stew, soup, beans and rice. It is just amazing and saves so much time.
Making this easy keto side dish recipe
Serves 8
Ingredients
- 2 heads cauliflower cut up into 1-2 inch pieces
- ¼ cup chicken broth
- ½ medium onion chopped
- 2 cloves garlic minced
- ½ cup heavy cream
- 4 tablespoons butter
- ½ cup sour cream
- 8 slices bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- ½ cup green onions chopped
- salt and pepper to taste
How To Make Our Loaded Cauliflower Mash
- Pour the chicken broth, onion, garlic and cauliflower to the Instant Pot, close vent, set to Manual for 10 minutes. Time may vary due to cauliflower texture. Cook until fork tender. Natural release pressure and check doneness.
- Mash with fork or potato masher until very small pieces.
- Add butter, cream and sour cream, mix until combined OR for smoother results whip with hand mixer.
Note* if cauliflower doesn't breakdown then it was not cooked long enough. You can fix this with the next step. -  Stir in half the cheese and bacon. Salt and pepper the dish to taste.
- Set Instant Pot to keep warm for 10 minutes. This will heat everything through without compromising the dairy products.
- Serve topped with remaining bacon, cheese and green onions.
