I am a huge fan of breakfast. If I don't eat breakfast soon after having my first cup of coffee I tend to feel yucky and can not get motivated. That is why a full, balanced breakfast packed with protein is important to my family and I. My biggest issue with breakfast is coming up with unique recipe ideas to break the monotony and avoid eating the same thing every morning.

One of my favorite things to do is experiment with new recipes. This fruity overnight french toast using Lender's Bagels instead of bread is a great example. Lender’s Bagels are Crunchy-on-the-outside, chewy-on-the-inside. The recipe incorporates eggs, milk, fruit and bagel pieces to make a hearty, well balanced breakfast to jump start the day. Lender’s bagels are filling – sustaining kids all morning. With the addition of milk and fruit we have built a better breakfast that provides protein, vitamins, carbohydrates and other nutritional values.

The Recipe for Fruity Overnight French Toast

(full printable recipe below)

Cut Lender's Bagels into 2" pieces. I used Plain since I add Del Monte Fruit Fusions Fruit & Veggie Cups.

Add bagel pieces to an 8x8 glass pan or casserole dish.

Whisk egg, milk, vanilla and cinnamon in a bowl until well combined.

Pour mixture over bagel pieces.  Then cover with plastic wrap and refrigerate overnight.

The next morning, top with a Del Monte Fruit & Veggie Fusions cup (or two) - I used Cherry Fruit Trio.

Add flour, brown sugar and butter to a small bowl. Use a fork to break up the butter until crumbly. Sprinkle over the top & bake on 350° for 30-40 minutes or until set.

Fruity Overnight French Toast Featuring Lender’s Bagels

Yield: 4 -6 servings
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients

  • 4 Plain Lender's Bagels
  • 3 Large Eggs, I used 4 small
  • 1 ⅓ cup Milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1-2 Del Monte Fruit & Veggie Fusions Cup
  • 2 tablespoons butter
  • ¼ cup flour
  • ⅓ brown sugar

Instructions

  1. Cut bagels into 2" pieces place into 8x8 pan.
  2. Whisk eggs, milk, vanilla & cinnamon until combined. Pour over bagel pieces.
  3. Cover and refrigerate overnight.
  4. The next day- preheat oven to 350
  5. Top french toast with fruit.
  6. Mix butter, flour and brown sugar in a small bowl until crumbly. Sprinkle over top.
  7. Bake 30-40 minutes or until set.
  8. Serve topped with whipped cream or maple syrup!
