Low Carb Chicken Salad is a version of classic chicken salad that has been made to minimize the amount of carbs per serving. For chicken salad this can usually just mean omitting the bread. The keto chicken salad itself is pretty much naturally keto and low carb. Use the right mayo and you are good to go.
What Keto Ways Can We Eat This
Although our old way of eating was to obviously smother this easy keto chicken salad over bread, we just can't do that anymore. Just kidding! Actually, we can. There are a ton of different kinds of low carb and keto approved breads and wraps out there. Lettuce can also be used as a wrap.

Making our twist on Classic Keto Chicken Salad
Our smokey southern style version of a classic keto chicken salad will have everyone saying wow. No, really! This version includes a little sweet, a little spicy and a little smokey flavor that is sure to wake up your taste buds.
To keep the carbs low we chose not to add BBQ sauce. Instead, we build the flavors using spices and liquid smoke. The sweetness comes from just a touch of monkfruit sweetener, which is an all natural zero carb, zero calorie sweetner with no bitter after taste. Aside from the liquid smoke, you may have all the ingredients on hand already.
Easy Keto Chicken Salad- Smokey Southern Style
Ingredients
- 1 rotisserie chicken, shredded
- ½ cup Olive Oil Mayo (or mayo of choice)
- 1 tablespoon mustard
- ½ teaspoon liquid smoke (we used Hickory)
- 2 stalks celery, diced
- 1 green onion, diced
- Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon monkfruit sweetener (or sweetener of your choice)
- ½ teaspoon cayenne powder
- Pinch salt & pepper ( to taste)
Instructions
- In a medium bowl, whisk together mayo, mustard and liquid smoke.
- Add seasonings and whisk to fully combined.
- Add chicken, celery and green onion and mix.
- Serve or refrigerate until cold.
