One Pan Creamy Keto Buffalo Chicken & Bacon
We can not express to you how creamy this skillet dish is. There are a million keto recipes out there for buffalo chicken, but this one stands out. Not only is it easy to make, it is ready fast. Most keto buffalo chicken casserole dishes take about an hour total. This one pan creamy chicken and bacon meal is ready in 20 minutes right on the stove.
What is Buffalo Sauce
Buffalo sauce is a vinegar based sauce that is made different ways depending on the brand or recipe. There are a few variations, however the base ingredients are : hot sauce, vinegar and butter. Traditionally used to coat chicken wings, this sauce is used in many different preparations. Buffalo sauce is used on chicken breast, in hot dips and even over cauliflower for a vegetarian "chicken wing" flavor.
Is Buffalo Sauce Keto
Yes! Buffalo sauce is generally keto friendly. Because it has more vinegar and less sugar it can be a great low carb option. Sugar content will vary by manufacturer and brand, however so by sure to check the labels. Honestly, I just buy/use our Hannaford store brand, there is virtually no carbs. Making the buffalo sauce perfect for everything from cooking in skillet and chicken casserole dishes like this one to using as a keto approved dip with ranch.
Making our Keto Buffalo Chicken Skillet

Ingredients
- 12oz chicken breast, diced
- 4 slices bacon, diced
- 1 tablespoon Ranch Seasoning
- 2 tablespoon butter
- 4 tablespoon cream cheese
- ½ cup almond milk (or diary of choice)
- 1 cup cheddar cheese, shredded (separated in ½s)
- â…“ cup Buffalo Sauce
Directions
- Preheat a skillet over medium heat for about 1 minute.
- Add chicken, bacon and ranch seasoning- sauté until golden and crispy. Chicken should not be pink in the middle at all. 165 internal temp.
- Drain grease, I used a colander. Set chicken and bacon aside.
- Reduce heat to low and return the skillet to the burner.
- Add butter, cream cheese and almond milk. Whisk until melted and fully combined.
- Stir in half the cheese, whisk until melted. Gradually increase heat just until cheese sauce bubbles. Reduce to simmer.
- Add chicken and bacon. Stir.
- Drizzle buffalo wing sauce all over and top with more cheese or parmesan.
- Cover and let simmer for about 5 minutes. Optional step- broil for 1-2 minutes

Can I Use Thighs instead of Chicken Breast
Yes! You can absolutely use chicken thighs instead of chicken breast. Buffalo chicken breast is highly sought after and that is why we chose to use it in this recipe. However, chicken thighs are actually recommended for a higher fat content in most keto meals. The butter, cream cheese and bacon in our skillet dish was high enough in fat so we opted for chicken breast to amp up the protein.

Can you freeze this meal?
Absolutely, I put this is a freezer safe meal prep container and then micro wave to reheat , similar to making a frozen meal.
These were delicious! I made mine a little bigger, i have 6 good sized ones. They dont rise very much but a serrated knife did the trick. Cheesy & a little sweet.
I served this on a salad with romaine, tomatoes, red onion and bleu cheese. So yummy! And no leftovers.
This was so good! I added fresh green beans and used cream instead, didn't add the cheese on top. Definitely a hit!
Can you use regular milk?
Hi Laurine, yes you can use regular milk, it just won't be as low carb. If that doesn't matter to you then that is ok and really the only difference 🙂
Made this but I added a frozen bag of seasoned cauliflower and baked in it in the oven after finishing the instructions! So good!
