A fajita is a Tex-Mex style dish traditionally made with strips of either chicken or beef, peppers & onions and served in a flour tortilla. The meat and veggies are usually seasoned with Mexican style spices such as cumin, paprika, chiles and garlic to name a few.
There are many variations to chicken fajitas like casseroles, stove top stir fry and like this recipe, instead of a soft flour tortilla we make them in the air fryer so it crisps up!

Making Chicken Fajitas in the Air Fryer
So making our chicken fajitas in the air fryer is simple. Yes, the traditional way is also easy, but we like to change it up sometimes and crisp the tortillas. Another reason we like to air fry the fajitas is that it minimizes smell and mess that stir frying can make. Even with our stove exhaust fan running, peppers & onions can make the house smell like the fair!
Ingredients for Chicken Fajitas in the Air Fryer
- 2 bell peppers, sliced
- 1 lb chicken breast, sliced
- 6-7 cherry tomatoes, cut
- 2 shallots or 1 yellow onion, sliced
- 2 tablespoon olive oil
- 4 tortillas
- â…“ teaspoon granulated garlic
- â…“ teaspoon ground paprika
- â…“ teaspoon chicken spices
- salt
- lime
- fresh cilantro or parsley, chopped
Air Fryer Fajita Directions
- Add olive oil, salt and all spices to a bowl.
- Pat chicken dry. Cut into thin strips and put in the bowl.
- Mix thoroughly.
- Add sliced peppers & onions, mix.
- Transfer the chicken with peppers and onions to the air fryer basket in a single layer. Cook for 12 minutes at 400F.
- Stir to Flip and cook for another 8 minutes at 400F.
- Finely chop the tomatoes and parsley.
- Divide the filling over the 4 tortillas. Place them in the air fryer basket and fry at 390F for about 2 minutes or until crunchy.
- Add the chopped tomatoes and parsley to the tortillas and serve the fajitas immediately. Drizzle with lime juice.

To meal prep cook the chicken and peppers in the air fryer as the recipe instructs. Skip adding the mix to tortillas and crisping them. They won't hold up. Instead, pack the fajita mixture into meal prep containers and add tortilla/s to a zip top bag. Reheating will depend on what you have available. If you DO have an air fryer available continue with the steps in the directions. If you take these to work and don't, heat in microwave for 20 seconds.
Yes, they can be frozen, however as above with the meal prepping- we only recommend air frying the fajitas in tortilla if eating right away. They get really crispy and will break apart if trying to store them. Instead, freeze the cooked mixture until ready to use. Pull and thaw, then reheat in air fryer for 10 minutes. Add to tortillas, place back in air fryer and cook for 2-3 more minutes.
Yes, you can use a packet of seasoning. If you are eating low carb or keto, however just check the label for added sugar and compare.
