Seafood Stuffed Mushrooms

One thing I am always looking for is a great low carb , keto approved appetizer that everyone can eat and will love. These seafood stuffed mushrooms are just that. No one will even know they are low carb. Don't like seafood? Skip it. Add some chopped spinach or broccoli!

I do want to apologize for the quality of the video. I have been testing different functions of my DSLR and playing around. I was so side tracked with this shoot that I totally forgot to change the setting back. Of course while I am filming myself cooking, I can't view it. Sigh.  So, rather use as is than not at all. You get the picture.....  pun intended.

Basically, the only difference in this recipe from a traditional stuffed mushroom is the type of bread used. You can use any keto or low carb bread or biscuit you have made or have on hand.

Here is how to make our Seafood Stuffed Mushrooms

Note* This recipe makes more than the video shows. About 18 mushrooms. The serving size and nutrition information will vary per batch due the size of mushrooms and the type of bread used. Pop your specific ingredients into a fitness app or nutrition analyzer for the exact nutrition.

Less than 1 carb per mushroom. Makes a great holiday keto appetizer everyone will eat.

Ingredients

  • 16 oz whole white mushrooms
  • 1-  4 to 6 oz can crab meat
  • 6 raw shrimp, chopped
  • ½ cup keto or low carb day old bread
  • 2 tablespoon mayonnaise
  • 1 tablespoon melted butter
  • 1 tablespoon fresh parsley & thyme, chopped
  • 1 teaspoon ea. salt & pepper
  • 2 tablespoon Olive Oil
  • ¾ cup mozzarella cheese, shredded

Instructions

Preheat the oven to 400º.

Remove stems and clean out the inside of the mushroom cap with a spoon.

In a bowl- mix together all ingredients EXCEPT the Olive oil and ½ cup mozzarella cheese.

Place mushrooms in a baking dish. Fill with stuffing.

Drizzle with Olive oil. Top with remaining mozzarella cheese.

Bake for 10-15 minutes or until mushrooms are tender.

  1. Why give us a keto recipe and provide meaningless calories but not provide the 3 macros ketoers use? Fat, protein and most important-the carb count? Keto is not designed around calorie counting.

    • Because the calories are auto calculated. Macros are not. And because I am only ONE person Doing ALL OF THE WORK- recipe writing, shopping, testing, cooking, photographing, editing, writing and sharing. At the time this was posted there was no good recipe analyzer to use.

      My Fitness Pal is inconsistent since it is based off of user submissions.

      SO. Now that there is a recipe analyzer I can trust in between all of the work I do to bring you recipes, I have to schedule times to go back and update old recipes. This one happens to have not been done yet.

      Recipes are free to our readers, a little thanks and understanding goes a long way.
