Ingredients
- 1 keto cheesecake crust cooled
Filling:
- 32 ounces cream cheese softened
- 1 teaspoon vanilla
- 1 teaspoon orange exract
- 1 tablespoon orange gelatin
- 1 cup boiling water
- ½ cup swerve
Topping:
- 1 cup whipping cream
- 1 teaspoon vanilla
- 2 teaspoon swerve
- 3-4 drops orange food coloring optional
Directions
In a medium sized mixing bowl, combine gelatin and sweetener. Stir in the boiling water while whisking until dissolved and set aside.
Using an electric mixer, whip the cream cheese until fluffy. Add the vanilla and orange extract and then pour in the gelatin mixture while beating until smooth.
Spoon the mixture into a cooled crust.
Whip the cream, vanilla, and sweetener until thick and stiff peak begins to form. Spread evenly on top of the filling.
Refrigerate for at least 1 hour or until set. Serve and enjoy!
