I think I may be just a little bit obsessed with our Keto Thai meatballs in lettuce cups. They are seriously delicious and so easy to make. These meatball lettuce cups are healthy, keto friendly and so full of flavor, you’ll wonder how they can possibly fit into all of those categories.
These keto Thai meatballs are perfect for a light lunch or dinner. I have even been known to snack on them. They are a great party food too. This is one of those keto recipes that you won’t have to stress about because everyone will love them.

What Ingredients and Supplies are Needed to Make Thai Meatballs in Lettuce Cups?
Ingredients
- 1 lb. Ground turkey or Pork
- 1 C. Pork rind crumbs
- 2 Tbsp. Thai green curry paste
- 2 tsp. Ginger paste
- 2 Tbsp. Swerve brown sugar substitute
- 2 Tbsp. Sugar free honey
- 3 Tbsp. Rice vinegar
- Salt to taste
- Red pepper flakes to taste
- 2 Tbsp. Chopped cilantro for garnish
- Lettuce leaves for serving
- 1 C. Coleslaw mix
- Sugar free sweet chili sauce for serving (optional)

How to Make Keto Thai Meatballs in Lettuce Cups
The recipe for these keto Thai meatballs in so simple.
Preheat the oven to 350 degrees.
Add the ground turkey, pork rind crumbs, curry paste, ginger paste, Swerve, honey, rice vinegar, salt and red pepper flakes to a mixing bowl. Knead with your hands to combine well.
Form the mixture into evenly sized meatballs, and place into a well greased 9x13 baking dish.
Bake for 25-30 minutes until cooked through completely.
Serve on lettuce leaf cups with coleslaw mix and cilantro.
Drizzle with sugar free sweet chili sauce if desired.

One of my favorite things about this recipe is how simple it is to make and how quickly it comes together. The recipe takes just 20 minutes to prep, and less than 30 minutes to bake.
Are Breadcrumbs Required for Making These Meatballs?
Typically, meatball recipes do require breadcrumbs, which is why oftentimes keto followers tend to avoid eating meatballs. This recipe though, is made with pork rind crumbs so you know that they will be keto friendly!
Are Thai Meatballs Keto or Low Carb?
While not all meatballs are low carb (note: breadcrumb question above), these ones are! This recipe makes six servings and each serving has just 2 net carbs.
What Variations Can Be Made to These Thai Meatball Lettuce Cups?
Here are some of my favorite variations for our Keto Thai Meatballs
- Use Ground Chicken or Pork instead of turkey. Any of these ground meat types will work well with this recipe.
- Try different types of lettuce. I think iceberg lettuce is great for these wraps, but you can also try romaine or green leaf. Whatever you prefer!
- Swap out the green curry paste for red. I know some people have a preference for the type of curry paste they use and that’s okay! Swap them if you want!
Tips for Making These Keto Thai Meatball Lettuce Cups
Grind Your Own Turkey / Chicken / Pork
Whatever meat you are using, you will certainly know the difference when you grind it up yourself. I personally love to make ground chicken out of moist chicken thighs. It really steps up the flavor profile of whatever recipe you are making and you will notice the added moisture when biting into the meatballs. It certainly takes more time, but it is worth it!
Use Fresh Lettuce
Of course, you can’t always get to the supermarket, but I highly recommend using fresh lettuce for this recipe. The fresh taste of crisp lettuce really does make a difference in the overall taste of this recipe.
If you grow your own produce, even better! There is nothing quite like a garden-to-table addition to your plate. YUM!

Before Baking
If you are meal prepping these keto Thai meatballs and you want to freeze them before baking, it’s simple!
Prep the meatballs per recipe instructions. Line meatballs on a parchment paper lined baking sheet (make sure they are spaced apart) and freeze for 1-2 hours. Once they are initially frozen, now you can store them together in an airtight container. These can store for up to 3 months.
To bake them, remove from freezer and thaw overnight in the fridge before baking.
After Baking
The freezing process is essentially the same if you are freezing them once baked. To do this, be sure they are cooled down from the oven. Line them spaced apart on a parchment lined plate or baking sheet and place them in the freezer for 1-2 hours. Once frozen, place them in an airtight freezer bag or freezer safe container. These can store for up to 3 months.
Thaw these overnight in the fridge and then reheat via the microwave or in the oven.

Notes
Meatballs can be seared in a hot skillet first, then baked OR use an air fryer.
To Sear then bake : heat a skillet with a drizzle of oil, brown the meatballs on all sides, place skillet (if oven proof) directly into preheated oven. Cook for 10 mins. OR if your skillet is not oven proof, transfer to sheet pan or baking dish.
To AIR FRY : preheat air fryer to 350, drizzle with oil. Place meatballs (carefully, they can be soft) in the air fryer and cook for 10 mins, I personally just shake the air fryer to move the meatballs around, you may need to use a spatula. Cook until internal temp is 180. About 15 mins total.
