⅔ C. Sour cream

1 Tbsp. Mayonnaise

½ C. Chopped bacon

1 ½ C. Shredded cheddar cheese

2 Tbsp. Dried chives

2 tsp. Minced garlic

¼ C. Finely chopped pecans

Salt and pepper to taste

How do you Make This Keto Cheesy Bacon Pecan Chicken?

Instructions:

Preheat the oven to 375 degrees. 

Layer the chicken in a 9x13 baking dish and season with salt and pepper to taste. 

In a bowl, stir together sour cream, mayonnaise, bacon, chives, garlic, and pecans. 

Spread the mixture over the chicken evenly. 

Sprinkle the chicken with the cheese. 

Bake for 25 minutes, and then heat under the broiler for 2-3 additional minutes. 

Check the temperature of the chicken with a meat thermometer when you are done cooking it. Chicken needs to be at a temperature of 165 degrees.

Just save yourself the bake time and frustration by preheating.

Use Large Chicken Breasts

Larger chicken breasts are best for this recipe as they are easier to work with and will also not dry out easily during the cooking process.

Avoid Using Chicken Thighs

Chicken thighs tend to not cook evenly. Although chicken thighs tend to be better for keto, try avoiding thighs in this particular recipe.

Buy Sugar-Free Bacon

When eating low-carb, it is important to remember to buy sugar-free bacon. Or at the least, bacon with as minimal sugar added as possible.     To meal prep simple divided the chicken into 6 equal servings, steam some broccoli and add to meal prep containers or separate air tight containers. Broccoli is a fantastic side dish for this cheesy bacon pecan chicken as you can not go wrong with broccoli & cheese. Use each leftover serving with 3 days is best.
