Our caramel chocolate Ritz cracker sandwiches are a fantastic balance of sweet and salty. They make a wonderful appetizer for parties and holiday gatherings or just a snack anytime the craving hits. Imagine two buttery, salty crackers with a caramel square baked inside then drizzled with chocolate. So good. This will be one of your new fav Ritz Cracker recipes.
Ritz Cracker Appetizers
As a kid these crackers were always on my mom's grocery list along with pepperoni and cheese, it was one of their go-to appetizers, a non-recipe sort of. As soon as the cracker company started marketing themselves as a holiday food item, Ritz crackers recipes for appetizers started popping up all over. Appetizers like mozzarella with tomato and pesto, cucumber with dill dip and Ritz crackers topped with peanut butter & jelly are top recipes that come to mind.

Making Our Caramel Chocolate Cracker Sandwiches

NOTE* I scaled my ingredients down to make 16 sandwiches. The recipe is written to make about 4 dozen. To make less, simply half the recipe.
Gather Ingredients- RITZ Crackers, caramels, chocolate, sea salt & eggnog, only a few ingredients to this recipe. (If you don't like eggnog, use milk or cream)
Preheat oven to 350º. Lay RITZ Crackers out on a sheet pan lined with parchment paper.
Unwrap caramels, cut in half side to side not down the middle and place one piece on each cracker bottom.
Bake for 8 minutes or until caramels are soft and begun to melt.
Top caramels with another cracker. Press down lightly.
In separate microwave safe dishes- add reserved caramels with 1tbsp eggnog and chocolate chips with 3 tablespoon eggnog or dairy of choice.
Spoon melted chocolate and caramel into separate zip top or piping bags. Grab some fun and festive nonpareils.
Snip a very small hole in the tip of the bag. Drizzle chocolate on to crackers. Repeat the process with caramel and top with nonpareils.
Grab the sea salt and sprinkles to finish. (optional)

Caramel Chocolate Ritz Sandwich Crackers Recipe

Ingredients
- 1 box RITZ Crackers
- 1 bag caramels, unwrapped
- 12 ounces semi-sweet chocolate chips
- 4 tablespoon eggnog (can substitute milk)
- Sea Salt for sprinkling
- Nonpareils for sprinkling
Instructions
- Preheat oven to 350.
- Lay crackers out on a sheet pan lined with parchment paper.
- Cut caramels in half side to side so you have a thin square, not down the middle and place one piece on each cracker. Reserve a small handful of caramels for melting to drizzle.
- Bake for 8 minutes. Remove and top with cracker. Press lightly.
- In microwave safe dishes- add chocolate to one and caramels to the other.
- Pour 1 tablespoon eggnog into caramels and 3 tablespoons into the chocolate.
- Heat for 30 seconds at a time, stirring between intervals until melted.
- Add each to a piping or zip top bag.
- Drizzle over crackers, sprinkle with nonpareils and sea salt.
