A favorite lunch in our house is chicken salad and it is something that can be made so easily either with leftover chicken, rotisserie or even canned chicken. It use to be that we stuck to the classic, old fashioned way of making chicken salad. Chicken, mayo and celery.
But Why put so much in chicken salad?
Years and years ago I remember seeing waldorf style chicken salad on a menu and thinking to myself "that is so crazy! Who puts all that stuff in chicken salad?". But, It wasn't until I expanded my palette grew up that I realized there was a reason for all of those mix ins. Because Flavor! Sweet tart, savory, crunchy and more.
The different ingredients touched each part of taste buds creating an amazing flavor combination. From that point on I started experimenting with different flavor profiles for our chicken salad. And that is why we put so many ingredients into our keto chicken salad!Â

Making our Keto BLT A Chicken Salad

Makes 6-8 servings
Ingredients
- 1 rotisserie chicken, shredded and chopped
- 5 slices cooked bacon, chopped
- 10 cherry tomatoes, quartered
- 1 avocado, diced
- â…” cup mayonnaise
- ¼ teaspoon each garlic & onion powder
- Salt & pepper to taste
- Lettuce for wrapping
- Celery seasoning to taste (optional)
Instructions
In a large bowl, combine all dressing ingredients. Mix well.
Add chicken, tomatoes, bacon and avocado. Stir to combine.
Wrap in lettuce, enjoy! SIMPLE.
Note *Also tastes amazing in Greek gyro pita bread or on sweet hawaiian rolls. BUT ONLY IF YOU AREN'T KETO AND LOW CARBÂ

To make a lettuce wrap follow these easy steps:Â
- Pick a lettuce such as green leaf, bib or romaine (remove the rib)
- lay it out on a flat surface
- add your filling in the bottom ¼ of the lettuce, the same as you would on a tortilla
- fold in the sides and start rollingÂ
- don't worry if it starts to crack, chances are the next fold/roll will cover it and it won't fall apart.Â
- NOTE- crisper, crunchy parts of lettuce will break easy
