Mouth Watering Slow Cooker Meatloaf Recipe
Juicy, mouth watering meatloaf from the slow cooker! This recipe serves 6, for more or less either double or cut the recipe in half.
of ground beef
1/2lb per person
strips of bacon
cooked and chopped
Crushed Pork Rinds
packet Onion Soup Mix
I skip additional salt because there is salt in the onion soup mix
beef bouillon cube
Turn your slow cooker on High (reduce to low after adding meatloaf)
Mix the ground beef, bacon, egg mixture, pork rinds, onion soup mix and pepper into a bowl until well combined.
Hand shape into mini meatloaves as pictured OR one loaf
Place side by side in the slow cooker.
Cover and cook on low until meat thermometer reads 145 degrees F about 3 hours.
In a microwave safe dish, combine bouillon cube, water and xantham gum. Heat for 30 seconds at a time mixing until starts to thicken. Pour gravy over finished meatloaf.
