Mouth Watering Slow Cooker Meatloaf Recipe

Juicy, mouth watering meatloaf from the slow cooker! This recipe serves 6, for more or less either double or cut the recipe in half.

  • 2 lbs of ground beef 1/2lb per person
  • 8 strips of bacon cooked and chopped
  • 2 Eggs Beaten
  • 3/4 cup Crushed Pork Rinds
  • 1/4 packet Onion Soup Mix
  • 1 Teaspoon Pepper
  • I skip additional salt because there is salt in the onion soup mix
  • 1 beef bouillon cube
  • 1 Cup Water
  • 1 tsp xantham gum
  • 1/2 Cup Chopped Mushrooms optional


  • Turn your slow cooker on High (reduce to low after adding meatloaf)
  • Mix the ground beef, bacon, egg mixture, pork rinds, onion soup mix and pepper into a bowl until well combined.
  • Hand shape into mini meatloaves as pictured OR one loaf
  • Place side by side in the slow cooker.
  • Cover and cook on low until meat thermometer reads 145 degrees F about 3 hours.
  • In a microwave safe dish, combine bouillon cube, water and xantham gum. Heat for 30 seconds at a time mixing until starts to thicken. Pour gravy over finished meatloaf.
