This chocolate pudding recipe is sweet and delicious without all the sugar. I love that it's an easy pudding, too. It doesn't take much work at all and can be eaten immediately. This will definitely be a pudding recipe you run to again and again.

So as you probably already figured out, the trick to this pudding is avocado.  NO don't go! Wait. Trust us.  Once you use avocado in an application like this you will see that it isn't what you think.

Most people dislike avocado because of the color and texture. That texture is what helps make a creamy, smooth pudding. The typical flavor of the avocado disappears. Just like in baking, the avocado is basically just there for volume, texture or to replace a less hearty healthy fat.

Ingredients

  • 2 avocados (learn how to Select The Perfect Avocado
  • ¼ cup granulated swerve sweetener (a sugar free substitute)
  • ½ cup unsweetened vanilla almond milk
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

Directions

Before you get started, gather up all your ingredients for this keto chocolate pudding recipe.

Cut the avocados in half and scoop the insides into a blender or food processor.

Heat the almond milk in the microwave for 1 minute. Stir in the swerve sweetener until dissolved.

Add the cocoa powder, vanilla extract, and almond extract to the blender or food processor. Add in the almond milk mixture.

Blend on high until smooth and creamy. Serve with fresh berries of choice, or chill for 1 hour for thicker pudding. Enjoy!

    • Sure! But milk isn't keto friendly and may kick you out of ketosis. If that is a non issue then go for it! 🙂

        • Cashew milk, as it's a Legume and not a tree nut. Or Coconut milk which most people with nut allergies can consume. It will however lend a mild Coconut flavor. Or Half and Half which is higher in carbs but less than milk.
