Cookie Monster Cookies
Featuring Funfetti!
Have a birthday party coming up? Or maybe you’re just in the mood to make something cute for the kids. No matter what the reason, these adorable cookie monster cookies are sure to have everyone applauding you. At first glance they may seem difficult, but trust me, these cookies are easier than you think! So easy even the kids can help.
If I can make these, you can!
The cookie itself is a simple cake mix cookie using Vanilla Funfetti color Aqua Blue cake mix and matching frosting. You can of course make your own and color it with food coloring. A prepacked mix helps out when we are short on time. The candy eyes can be purchased at most any big box store like Walmart. Total cost to make these cookies was $5.50 because we already had the crushed cookies on hand. To buy everything will cost around $10 depending on your store and yields 16 cookies.
Inspired by Cookie Monster Cupcakes on the PBS website.
Here is how to make them:
Preheat the oven to 350. Do not prepare cake mix according to package instructions, instead add 1 egg, 1/3 cup oil and 2 teaspoons baking powder. Mix.
Drop 3 inch scoops onto a cookie sheet, do not worry about them being perfectly rounded. Use the scoop or your finger to flatten out slightly into a head shape. Bake 10 minutes or until set.
While cookies are baking, prepare frosting in a piping bag with star tip. Have eyes on hand.
Remove baked cookies from the oven. Allow to cool completely. About 15 minutes. They cool fairly quickly. Feel free to refrigerate them to speed up the process.
Using the piping bag, place it straight up on the cookie and lightly squeeze, lifting up as you squeeze. This will create a point that resembles the cookie monster cookies “fur”. Continue over all the cookies.
Place candy eyes on the top and use black decorator gel to create a mouth.
Add crushed cookies in the mouth. Finish with black gel in open spots of the mouth if needed. Enjoy!
