Easter Bunny Cookies
Aren’t they absolutely the cutest thing ever? Our daughter and grandson thought so! We made 3 dozen of these last year to bring to the local church for the children after Sunday school. Not only did they think they were so cute, but super yummy as well.
I love these cookies because they remind me of a cupcake, but without the bottom. You know, kind like how we have on obsession with muffin tops and not the bottoms? Same concept. These are a soft, moist, cake like cookies that holds up really well to the frosting and decoration.

Here is how to make our Easter Bunny Cookies
Ingredients
- 1 box dark chocolate cake mix, prepared per box instructions
- 1/2-2/3 cup flour
- 1 teaspoon baking powder
- 1 can vanilla frosting
- 1 bag marshmallows
- 2 cups shredded coconut
- pink sugar crystals
- pink jelly beans
- chocolate chips
Preheat the oven to 350º.
Prepare cake mix according to box instructions, add additional flour and baking powder. Cookie dough should be thick enough to scoop and drop. Add flour until this texture is reached.
Place 2″ balls/scoops on a cookie sheet or mat 2″‘s apart.
Bake cookies for 10-12 minutes or until firm. Allow to cool completely before decorating.
Frost cookies, hold cookie with frosting sound down and lightly press into shredded coconut. Flip back over and place on a flat surface.
This is totally cute and clever- to make the bunny cookies ears simply cut the marshmallows in half corner to corner (diagonally). Dip the sticky, cut side down onto pink sugar crystals or sprinkles.
NOTE* Do not cut all of the marshmallows first before dipping into the pink crystals, the sticky cut side will dry up and the sprinkles won’t stick.
Now, simply add the nose and eyes! BOOM, the cutest little bunny cookies ever. Who won’t love these? To be honest, I am drooling as I write this. I wish we had some left!
