Do you love the taste and texture of a good slice of lemon bread? Why not kick the flavor up a couple notches by adding blueberries? Why not take things one step further and turn that delicious bread you love into cookies?
These Blueberry Lemon Poppy Seed cookies are a nice thick, soft cookie that will remind you of lemon bread with the addition of blueberries taking the flavor over the top! If you’re looking for a burst of freshness, these are the perfect cookies to make. You can even whip together a quick icing using powdered sugar and lemon juice for an additional layer of flavor. Either way, these cookies will be a big hit and are wonderful served with tea.
Here is how to make them, enjoy!
NOTE* You may notice that D is not a traditional baker, he rarely ever uses two bowls (one for dry and one for wet ingredients). The main reason for this is SIMPLE- we have never once seen a difference in how the cookies come out! He is certain there are plenty of professional bakers out there that would cringe at this, but it works for us and it will work for you. Plus who wants extra dishes for no reason? Not us!
- Cleaned pumpkin seeds
- Olive Oil
- Cookie Sheet
- Preheat oven to 300°
- Clean all of the pumpkin off your seeds and rinse them in cold water
- Spread out on a kitchen towel and pat dry
- Pour onto a cookie sheet, drizzle evenly with olive oil and salt , mix well (how much depends on your taste)
- Spread out into an even single layer ( I use my hands, it is easier)
- Roast for about 15mins or until golden brown, turn over with a spatula half way through
