Lemon Meringue Strawberry Thumbprint Cookies
Think spring? How about Think Summer! I have been thinking about summer since, well … since summer ended. It is for sure my favorite time of year. The sun can not get hot enough for me and I enjoy all things refreshing. Including these cookies I created this past summer. Ok, so I know there are those of you still enjoying winter and thinking I am crazy already talking about summer. So sorry. I just can not wait to dive into the flavor of summer. So strawberry it is!
These cookies pair two of my favorite summer flavors, strawberry and lemon. Like a traditional thumbprint cookie, but with a twist. The addition of the Meringue puts these over the top. Plus it makes them look absolutely adorable.
Bake the cookies, re-do your thumbprint if necessary, add the preserves, chill
Spoon on the meringue, broil until golden brown, remove from oven, chill immediately
For the Cookies :
I follow this amazing recipe from the man, Emeril! I just substitute Raspberry for Strawberry
For the Meringue :
2 Room Temperature Egg Whites
4 Tablespoons of Sugar
1 teaspoon of vanilla
Whip the egg whites until frothy, continue whipping adding one tablespoon of sugar at a time. Add the vanilla and whip until stiff peaks form on the whisk or mixer.
